Why do we love it?

Differentiation and versatility! These two characterize both the favorite variety of Assyrtiko and producer Laurens / Lavrentis Hartman.

Assyrtiko once again proves that it can provide equally interesting and distinctive wines in very different climates than the island of Santorini. Lavrentis (he introduces himself as Lavrentis) is an example of determination, adaptability and creativity, leaving his life in the Netherlands to deal with the production of wine in the frozen land of Amynteo.

With minimal intervention, biodynamic methods, fermentation with indigenous wild yeasts and bottled without filtering, Terra Levea White 2014 by Domaine Karanikas is an extremely expressive varietal white wine from Assyrtiko which incorporates all the intense varietal characteristics.

It is of small production and always runs out early. We obtained some of the last bottles of the amazing year of 2014 for members of botilia.gr!

Tastes Like

Pale yellow with pink hues in the glass.

The intense, complex aromatic bouquet is full of surprises. Rose, jasmine and citrus blossoms combined with citrus, grapefruit and orange peel. Chamomile, oregano and thyme add botanical character complementing the mineral sensation in the nose.

The good volume body is balanced perfectly with the vibrant, crisp acidity and a slight feeling of oxidation that adds interest. Lemon, lime and hints of honey dominate while the long aftertaste leaves the mouth with a sense of grapefruit and grass.

PAIR IT

Combine with grilled salmon, burger salmon, grilled fish or cabbage rolls with rice.

Salmon burger

  • 1/2 kg fresh salmon fillet without skin and bones
  • 1/3 cup of bread crumbs
  • 1 tbsp of Dijon mustard
  • 2 tbsps grated Parmesan cheese
  • 2 cloves of garlic, finely chopped
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. of paprika
  • 2 tbsps. barbecue sauce
  • 4 whole wheat bread rolls for burger

Chop the salmon into small pieces, put it in a bowl and mix it with your hands until it becomes somewhat homogenized.

Add all other ingredients except buns and mix well with a spoon until they are well mixed. Make 4 equal sized burgers.

Heat a pan (or grill) in medium to high heat and cook the salmon burgers by turning them until golden - about 3-4 minutes per side.

Remove from the fire, place the burgers on the rolls and serve with extra BBQ sauce, lettuce and onion.
