Why do we love it?

Ok, we know that Siatista is known mainly for its desert wine from sun-dried grapes. What would you say, though, if we shared the secret that somebody is making a fantastic Xinomavro there? There is enough word going around about Diamantis Winery. It is this boutique winery in Siatista, which has long been discussed in all the wine circles! A few months ago, we were talking about its amazing, single-varietal Moschomavro, but now it's time to uncover a really great wine from the Diamantis Winery.

Why do we love it?

Because for the Xinomavro 2015 Diamantis Winery, the best clones of Xinomavro have been selected and planted in vineyards at an altitude of 850 m - 920 m, where the cultivation is naturally organic. After careful selection of the fruit, the precious juice enters French oak barrels and "rests" for up to 24 months.

The result is extremely impressive, with silky tannins and juicy fruit making it brilliant. The winemaking style is more modern, more fruit oriented and less green in general. If you are a fan of the variety, this wine should definitely be part of your collection!

When to drink it?

It depends on your self-restraint. Now it is lively and playful. In 4-5 years, it can be one of the diamonds in your collection.

Open ruby ​​in the glass.

Expressive nose, moderate (+) aromatic intensity starring strawberry, cranberry and cherry. Rose, olive leaves, marjoram and vanilla appear in second role. Notes of fresh soil, iodine and green olives give extra complexity to the bouquet.

Medium-volume body, medium-intensity tannins and sharp, refreshing acidity that characterizes the variety. The intensity and balance in the mouth are brilliant. Juicy strawberries, red sour cherries, blackcurrant, vanilla and olive dominate and remain in the long-lasting aftertaste.

XINOMAVRO 2015 - DIAMANTIS WINERY

PAIR IT

Pair with fillet with truffle sauce, yuveti chicken or beef in red sauce

Traditional giouvetsi (orzo with beef stew)

  • 1 kilogram of beef cut into pieces
  • 3/4 cup olive oil
  • 1 onion whole
  • 3 cloves of garlic
  • 2 carrots grated on a grater
  • 1/2 tsp. oregano
  • 1 pinch of cinnamon
  • 1/2 cup white dry wine (preferably Moschofilero or Sauvignon Blanc)
  • 1 kilogram of tomatoes grated on a grater
  • 1 tsp. sugar
  • 500 gr thick orzo
  • salt
  • freshly ground pepper
  • Kefalotyri cheese cut into cubes

Heat ½ cup of olive oil in a deep pot. Saute the beef until it gets  golden - brown on all sides, about 8-10 minutes.

Then add garlic, onion and carrots.

Pour in the white wine and add sugar and cinnamon.

Cover with the grated tomatoes and 1 liter of water. Cover the pot, lower the heat and let the meat braise for 1 hour.

Taste and add  salt the pepper according to your prefernece.

In a frying pan, warm the remaining olive oil and saute the orzo over until it absorbs all the oil.

Preheat the oven to 170 degrees.

Transfer it to a pyrex pot, add the braised meat and pour over the sauce. It is essential that the sauce cover the orzo. If it has been evaporated during boiling, add some warm water (to fully cover the orzo).

Bake in the oven for 40 minutes and ten minutes before it is done, add the diced kefalotyri cheese.

Serve while it's hot.
