Like all things, it all started with an idea. The idea became an experimentation. The result? A sparkling wine different from anything else you've tried so far.
It borrows its name from the Chimera, a mythological creature with the body of a goat, a lion head and a snake tail. As scary as it may sound, the Chimera is Nikos Kavounis’s dream coming true. A dream that has to do with the creation of innovative products that will promote the Mediterranean wine culture internationally.
In collaboration with the Rhodian Winery Cair, they have produced with the traditional method of champagne, a sparkling white wine from the varieties Chardonnay, Athiri, Assyrtiko and Malagouzia. Adding biological Kozani crocus in the final stages of preparation, catapulted the result at a whole different level.
Impressive color, dynamic and persistent foaming, unique aromatic complexity and explosive flavor, make the Chimera differ from anything you have tried so far.
