Why do we love it?

The third Thursday of November is the biggest day of celebration of wine worldwide. “Le Beaujolais Nouveau est arrivé!” sounds across the world! The Beaujolais Nouveau has arrived! Millions of bottles of French red fruity wine start from Beaujolais France to fill the cellars, restaurants and cafes initially in France and then the world in an unprecedented race for the first wine of the season. The fresh red wine with fanatic fans, the one that should be consumed in a short time from the day of production, the one that only a few days ago was still hanging on the vines, the one with the fruity character which marks the end of the harvest season, has arrived.

On the other hand, somewhere in Crete you may hear: “Manolio, did Gavala’s fast Mantilari arive yet?”. The first organic, fresh red wine from Crete with the method of Nouveau is here. The innovative Nikos Gavalas filled the gap with Speedy 2016. A wine that as its name suggests, is characterized by speed. It was vinified as soon as possible with short extraction times and immediate bottling to enclose its fruity character in the bottle. Enjoy it immediately! Why? Because the fruit is so vivid and fresh now that you will not be able to resist.

Tastes Like

Bright ruby color with purple hues.

Nose full of freshness and vitality. Strawberry, cherry and raspberry vying for the lead with banana and chocolate hints in the background.

Medium volume body with almost nonexistent tannins. The fruit is surprisingly expressive while the acidity is refreshing. Strawberry and cherry stand out as fresh as they can be, and remain in the mouth in the good-length aftertaste.

SPEEDY MANDILARI NOUVEAU 2016 - NIKOS GAVALAS

PAIR IT

Enjoy it on its own as an aperitif or pair it with roast pork, apaki or pasta with red sauce

Roast beef with spices and red wine sauce

  • 2 tbsps. of peppercorns
  • 2 tbsps. of black or white mustard seeds
  • 2 tbsps. of fennel seeds
  • 1.5 kilos of beef fillet
  • 2 tbsps extra virgin olive oil
  • 1 tbsp of wholegrain or English (preferably gluten-free) mustard
  • 3 coarsely chopped red onions along with the peels
  • A pinch of thyme

For the sauce:

 

  • 2 tbsps extra virgin olive oil
  • 1.5 with 2 tsps of corn flour
  • 2 beef stock cubes
  • 3-4 tbsp red currant jelly
  • 400ml red wine

Two days ago, grind the pepper and the mustard and fennel seeds using a mortar. Brush the fillet with mustard and then roll it to freshly ground pepper. Cover with cling film and place it in the fridge.

Two hours before you start cooking, take the meat out of the refrigerator to reach room temperature.

Preheat the oven to 180C. Heat the olive oil in a saucepan and cook the meat until it gets a beautiful brown color. Use onions in the casserole as the base and place the meat on top of them. Bake for 20 minutes for medium or 35 minutes for a well-done beef.

Remove the beef from the casserole and place it on a platter covered with foil for 30 minutes to keep it warm. Put the casserole on the heat and along with the onions and meat juices, add the corn flour and the beef stock cubes. Stir the jelly and gradually pour the wine while stirring. Simmer until the liquid is reduced. Strain the sauce and remove the onions. Slice the beef, flavor it with thyme and serve with the red wine sauce.
