Why do we love it?

Crozes Hermitage 2019 Saint Cosme is an inconceivable wine from the mythical winery of Rhone. Its uniqueness derives from the fact that it hasn't Grenache in the blend and it is made exclusively from an ancient Syrah clone.


Saint Cosme winery has been located in southern Rhone, outside the village of Gigondas, since 1490. It is a family affair as Louis Barruol, the family's 14th generation of winemakers is currently at the helm. The emphasis is on highlighting the terroir and the old vines, with ancient winemaking methods and organic farming. Louis Barruol believes that there are fantastic plots of land in the surrounding area, with a unique combination of different soils and special terroir that require effort and time but the resulting wines totally worth it.

The vineyards on the hills of Gervans and Erome, behind the hill of Hermitage, are such a shining example. In fact, Louis believes in their uniqueness so much that he thinks they could be an appellation on their own. This is where the grapes for the Crozes Hermitage 2019 Saint Cosme come from. The grape variety is called Serine and is an ancient Syrah clone. The wine is fermented with ambient yeasts and matures in new barrels (20%), second use (40%), and third use (40%), for twelve months. It is bottled unfiltered and is impressively expressive.

Crozes Hermitage 2019 Saint Cosme has a deep purple color and intoxicating nose, with aromas of bilberry, sour cherry, violet, lavender, green pepper, vanilla, chocolate, leather, and cedar.

In the mouth, it has a medium (+) body, juicy, crisp acidity, and silky tannins. Ripe dense fruits such as cherry, blackberry, sour cherry, and plum are mixed with notes of vanilla, pepper, eucalyptus, lavender, butter, and cocoa.

with slow roasted lamb with Provencal herbs, duck fillet with red fruit sauce, beef in wine sauce and papardelle with wild boar ragout.

Wild boar casserole with tagliatelle pasta

  • 1 kilogram of wild boar
  • 1 carrot coarsely chopped
  • 1 celery coarsely chopped
  • 1/2 bunch of fresh onions finely chopped
  • 1/2 bunch of parsley finely chopped
  • 2 cloves of garlic
  • 3 tbsps. of mustard
  • 3 tbsps. of lemon juice
  • 5 allspice berries
  • 1 bay leaf
  • Salt and pepper
  • 200 g olive oil
  • 250 ml red wine (preferably xinomavro)
  • 500 g of tagliatelle

 

Cut the wild boar in portions. Put all the ingredients in a bowl, except olive oil and pasta. Marinate for at least 12 hours.

When we are ready for cooking, remove the boar from the marinade, drain it to leave the many liquids and sauté with the oil until it gets golden-brown. Add the marinade and lower the heat to simmer for 30 minutes.

Transfer them all to the casserole and put it in a preheated oven, at 150 ° C. Stir regularly to keep liquids from sticking. If more liquids are needed, add some vegetable broth.

Boil the pasta according to the instructions (preferably al dente).

Garnish with a little chopped parsley over the plate.
