Why do we love it?

Wherever Elia Blend of Karavitakis Winery appears, it steals the show. It's as if it's designed to be the perfect red wine for everyone, even if they have completely different tastes. How can it be?

The answer is that Nikos Karavitakis knows very well what he is doing. While he was vinifying Elia Blend and had to make important decisions such as what type of barrel to use, knew exactly what wine he wanted to make. Nothing was accidental, everything was very carefully thought out. The goal was for Elia Blend to be able to conquer the demanding American audience. That means it had to be ready to compete with California’s iconic wines, with tremendous concentration, intense smokey, and spicy character.

He started with great care in the vine and perfect phenolic ripening of the grape, that way he succeeded in having dense and luscious fruit. Aging in American oak barrels for 12 months gave it a bold, smokey and chocolatey character. The 3 varieties of the blend, Syrah, Grenache, and Carignan, complement each other uniquely, making up a complex bouquet that really has it all.

Decant it, to unravel its complex character, put a dry-aged steak next to it and thank us later.

Tastes Like

Elia Blend Karavitakis Vineyards has deep purple-black color that prepares you for the monstrous concentration that will follow. Blueberry, sour cherry, blackberry and plum blend harmoniously with notes of coconut, chocolate, vanilla, cedar, tobacco, pepper, cigar and licorice.

It has rich body, with dense black fruit dominating, medium but velvety tannins and balanced acidity. Notes of espresso, chocolate, cigar, bacon, cedar, vanilla and black pepper complete the complex palate.

Pair it with beef rib eye, Iberico pork chops or beef burger with barbeque sauce.

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
