Why do we love it?
Les Acacias Malbec or otherwise The Big Malbec of Cahors, that shows its teeth with audacity to Argentina! We've said before that Cahors in France is the home of Malbec and certainly Fabien Jouves of Mas del Perie is the king of the region.

Fabien Jouves comes from one of the oldest families in Cahors and since 2006 he has founded Mas del Perie winery with the aim of making single vineyard, natural wines based on Malbec, and highlighting the many different faces of the variety. The young and restless Fabien is probably doing very well because Decanter, Robert Parker, Jancis Robinson, and all the French publications have already written about him. His goal is to create natural Malbec wines with the character of Burgundy!

Yes, you read that right! It follows the standards of Burgundy in terms of winemaking and aging. Specifically, for Les Acacias, the grapes are harvested by hand, at the appropriate time, followed by 30 days of extraction, and then the wine is fermented in concrete tanks with ambient yeasts. Then it matures for 18 months in oak foudres of 600 liters. It is bottled unfiltered and without any other intervention. The result is his own version of a rich, super-concentrated but at the same time elegant Malbec that has already gained a fanatical audience around the world.

If you are looking for a ripe, jammy Malbec look elsewhere. Les Acacias is for those who want to taste a truly Big Malbec, with character and personality.

LES ACACIAS 2021 - FABIEN JOUVES

PAIR IT

Pair it with cassoulet, beef ribs with wine sauce, lamb with herbs, or duck breast with red fruit sauce.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
