Why do we love it?

In 1988, Eva and Harris (think of Ev-haris) decided to make their winery in a rather unusual area. In the Gerania Mountains, just outside Megara. If you search a little more you will discover that vines were cultivated in the area since 1000 BC and Megareas, from which the area took its name, was the son of Inoi, whose name is inseparably linked to wine.

Being both connoisseurs, they chose the area for its history and its terroir as it is situated between two seas (Corinthian, Saronic), with the levels of humidity, coolness and heat being ideal! They are so passionate about their work that they consider the vineyards as their children and care for them with so much dedication and love that organic farming was almost the definite direction.

Their favorite Merlot is cultivated in the privately-owned vineyard of Domaine Evharis, at an altitude of 400 meters. Harvesting is done manually and after multiple levels of careful selection of the berries, the extraction lasts 15 days and is done in special type open tanks. The precious juice goes into French oak barrels for 12 months and when it finally comes out, Merlot 2012 Domaine Evharis has complexity, almost silky tannins, finesse and at least 10 more years to live if kept in proper conditions. Choose carefully when you will enjoy it.

Our proposal is to uncork one now and one in 2021! Ha, do you bet that you will open both on the same day?

Tastes Like

Moderate ruby color in the glass.

Nose of medium (+) aromatic intensity with notes of cherry jam, cranberry, dried plum and vanilla on first level. Cedar, milk chocolate, honey and tobacco follow adding complexity to the bouquet.

In the palate, it has a medium body, well-developed, mild tannins and refreshing acidity. Rich chocolate, cherry and blackberry flavors unfold with the first sip. Cocoa, vanilla, cinnamon, wood and tobacco enthuse the palate while the long-lasting aftertaste leaving a sense of fresh plum in the mouth.

Pair it with pork with plums, beef liver with caramelized onions or lamb in the oven.

Pork tenderloin with sun dried tomatoes

  • 2 pork tenderloins (fillet), each about 300g, with the excess fat removed
  • 1 tbsp extra virgin olive oil
  • 2 cloves of garlic, finely chopped
  • 2 tbsps. chopped fresh thyme
  • 1 tsp. of salt
  • 1/2 tsp. of freshly ground black pepper
  • 2 tsps. of butter
  • 1/2 cup of red wine
  • 1/2 cup chicken broth (or a chicken broth cube and half a cup of water)
  • 5 sun dried tomatoes cut to 4
  • 3 tbsps. of cream

Preheat the oven to 200 ° C.

Brush the meat on both sides with the half olive oil. Rub with garlic, thyme, salt and pepper.

In a stainless-steel pan, heat the remaining olive oil and butter to medium-high heat. When it’s hot, add the fillets and cook until golden brown on both sides, about 5 minutes. Place the fillets in a baking pan and place them in the hot oven. Let them cook for 12 to 15 minutes.

Remove the meat on a platter and cover it with foil to keep it warm. Put the remaining juices of the pot back in the pan.

At moderate to high temperature, add the wine by stirring to keep it from sticking. Add chicken broth and slices of sun-dried tomatoes. Lower the temperature and simmer for 2 to 3 minutes. Then add the cream and stir well to mix it up.

Cut the fillets into chunks and spread them on a platter. Pour the hot sauce over them with a spoon and serve immediately.

We recommend serving with long-grained rice.
