Why do we love it?
Apla Rose Oenops Wines 2019 is a rose wine that stands out because it is not simple at all ("Αpla" means simple in Greek)! On the contrary, it is complex and enjoyable, managing to combine, with mastery, 3 red Greek varieties, Xinomavro, Limniona, and Mavroudi!

Nikos Karatzas, with many years of knowledge and expertise from his collaboration with the most important wineries in the country, decided to build his own boutique winery. Based on Drama, and with continuous work, he searches and finds the best vines, with old vines, in the best sites of the surrounding areas. For Apla Rose, Xinomavro (60%) comes from Amyntaio and Naoussa, Limniona (20%) from Messenikola, and Mavroudi (20%) from Thrace. The wine is fermented in stainless steel tanks and matures there with its fine wine lees for 4-6 months, while part of Xinomavro matures in amphorae. The result has a strong character of red fruits and discreet botanical notes, which make it an ideal partner for Mediterranean dishes.

Tastes Like
It has pale salmon color with orange hues. It has discreet aromas of tomato jam, strawberry, cherry, apricot, rose, pomegranate and grapefruit. In the mouth it has medium body and refreshing acidity. The vegetality is more intense on the palate and is expressed through notes of tomato leaves, white tea and herbs. White cherry, strawberry, raspberry, dough and pink grapefruit complete the set.

with pasta with smoked eel, large fish on charcoal or stuffed tomatoes.

Ravioli with sun-dried tomato pesto and chicken

For tomato pesto

  • 200 g sundried tomatoes
  • 100 g Parmesan cheese grated
  • 80 g pine nuts
  • 1 clove of garlic
  • 50 ml olive oil

 For the chicken

  • 1 fillet of chicken
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary
  • 1/2 cup of oil
  • 1/2 lemon

For the pesto

Peel the garlic and remove the green part. Add all the ingredients to a blender and beat them until the mixture is homogenized.

For the chicken

Cut the fillet into thin strips. In a bowl, mix all other ingredients. Marinate the chicken in the mixture for at least one hour.

In a preheated  oven (200°C) , bake the chicken for about 5 minutes on each side until it gets a golden color.

Boil the ravioli according to the manufacturer's instructions.

Serve by spreading the pesto of sun-dried tomatoes over the pasta and add chicken slices on the top.
