Why do we love it?

Brut Cuvee Speciale by Domaine Karanika is based mainly on Xinomavro, a variety that has all the necessary characteristics to produce great sparkling wines. It is no coincidence that many compare it to Pinot Noir, one of the main varieties of Champagne.

This was the reason that changed the life of Laurens Hartman and his wife Annete, who left Holland to fulfil their full of bubbles dream in cold Amynteo.

Their pride and joy, the Brut Cuvee Speciale, is produced from selected Xinomavro and Assyrtiko vines older than 40 years, cultivated with organic and biodynamic methods near lake Vegoritida. The second fermentation takes place in the bottle with the traditional method of Champagne (méthode traditionnelle), which can be costly and tiring, having to manually rotate the bottles every day, but it rewards them with wonderful autolytic aromas and flavors that make Brut Cuvee Speciale by Domaine Karanika truly unique.

Described as a world class sparkling wine and getting rave reviews by experts of champagne such as Tom Stevenson, the Brut Cuvee Speciale by Domaine Karanika simply confirms every year that it is probably the best Greek sparkling wine.

Tastes Like

Yellow straw color in the glass with countless, persistent, fine bubbles.

Absolutely elegant nose, with fine aromas of citrus and stone fruit accompanied by autolytic yeast aromas, toasted bread, and hazelnut.

Creamy mouth, rich, with refreshing, persistent foaming. Combined with the noticeable acidity it adds unique freshness in the mouth. Fruits and yeasts win the palate and remain in the fresh, long-lasting aftertaste.

Enjoy it as an aperitif or pair it with every festive dish that comes in mind!

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
