Why do we love it?

Brut Cuvee Prestige 2015 from Domaine Karanika is finally here!

The much – awaited vintage premium sparkling wine by Domaine Karanika came in limited quantity and is already becoming scarce!

The master in his kind, "biodynamic" and "organic" Lavrentis / Laurence Hartman, strikes again with his best sparkling wine so far which is a unique blend of Asyrtiko and Xinomavro that he had in mind for a long time. 

The ratio reached after tests is 60% and 40% Assyrtiko Xinomavro. The fermentation takes place separately with indigenous wild yeasts. Then they were blended and remained together in a tank for 3 months prior to bottling and the start of the second, autolytic fermentation in the bottle.

Applying the traditional method of Champagne blend remained on the lees for 12 months acquiring highly complex and varied character which will be envied by several champagnes worldwide.

Tastes Like

In the glass its colour is light yellow with greenidh highlights and it has intense frothing with multiple strings.

In the nose, it has a complex bouquet, with  the autolytic aromas of biscuit and dough dominating in combination with noticeable minerality and light vegetable aroma . The fruit is expressed gradually with pear and peach being intergrated beautifully accompanied by lemon – flower and delicate sense of pepper.

In the mouth, there is an explossive sense with the intense acidity to set the tone accompanying perfectly the fruit and the dough that stand out in the palete. The bubbles last long and give a light sense that ends up in bitter almond aftertaste.

Combine it with shelfish or your best festive mood!  

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
