If you are looking for flowers, fruits, and pale colors, you can look elsewhere, because Le Rose Domaine Ligas is the exact opposite and it is proud of it!

The tradition of the Ligas family with wine dates back several decades and the beginning was with Thomas Ligas. After completing his studies in Thessaloniki, he followed his passion for wine in France. When he returned, he founded the family winery in Pella, which was meant to become famous all over the world for its fantastic, natural wines. Thomas now has at his side his two children, Melissanthi and Jason, who have studied in France and have immersed themselves in permaculture.

With a philosophy loyal to natural vinification, they create wines based on the local varieties that reflect the unique terroir of Pella. Their success is so huge, that their wines are sought after worldwide, and of course, they are pre-sold before they are even bottled. Le Rose Domaine Ligas is one of them and perhaps one of their best. It is a natural, Greek rose wine from Xinomavro, that is fermented with indigenous yeasts in stainless steel tanks, and then it ages for 6 months, in old French oak barrels previously used for Selosse Champagne. It is bottled unfiltered and without any other intervention.

Le Rose Domaine Ligas is a highly gastronomic rose Greek wine and demands rich dishes and tomato flavors!

Tastes Like

It has deep pomegranate color and intense aromas of tomato, strawberry, dried cranberry, yogurt, pomegranate, cherry and raspberry jam framed with notes of orange, herbs and Turkish delight.

In the mouth it is unique and enjoyable, with medium (+) body, refreshing acidity and light tannins. Notes of tomato in any form, fresh, sauce, sun-dried, jam, meet the ripe, red fruits on a background of marjoram and dried rose.

PAIR IT

Pair it with grilled tuna, linguine with shrimps, or with vegetable stews with tomato.

Stuffed veggies with couscous

For stuffing
- 250 g couscous
- 3 fresh onions
- 1 dry onion
- 2 cloves of garlic
- 1 small bunch of parsley
- 2 tablespoons of black currants
- 2 tablespoons pine nuts
- 40 ml. olive oil
- 150 ml. tomato juice
- Freshly ground pepper
- Salt

You will also need:
- 4 tomatoes
- 4 zucchinis
- 4 green peppers
- 60 ml. olive oil
- 100 ml. tomato juice
- Freshly ground pepper
- Salt

Cut and remove the lids from the veggies and empty the interior.

In a large bowl, finely chop tomatoes, parsley, onions and garlic. Add tomato juice, pine nut, raisins, salt, pepper and 40 ml. olive oil, mix and add the couscous and 50 ml. water.

Stuff the vegetables and place them in a large saucepan next to each other. In a bowl, mix 60 ml. olive oil, 100 ml. tomato juice, 150 ml. water, salt-pepper and pour over the veggies.

Place the saucepan on medium heat, for 3-4 minutes and then simmer for about 35 minutes, until the vegetables are softened or when the juices run out. Let cool and serve or you can eat it cold.

Notes
- You can add in the pot and a couple of potatoes cut into chunks.
- You can make it in the oven too.
- Pine nuts and raisins can be omitted.
