Why do we love it?

The bottles of 2017 proved to be very few as the wonderful Moschopolis 8 from Moschopolis winery disappeared within just a few months of its release.

The unique vinification, with the 8-month maturation in oak, adds to its complex and so unique character. The barrels used are both new (30%) and old (70%). The blend also known as Syrah and Xinomavro still participate in the blend 50-50. 

And this year, like last year, we loved it for its structure, intensity, and sophistication that reminiscent of red wine and make it stand out from all the other roses that are out there. Light, onion, or salmon color, with a playful fruity character, is everything that Moschopolis 8 IS NOT. Here we are talking about a rose with vivid pink color which will shake you from the first sip and make you look at your glass again and again just to be sure that this is a rose wine. Rarely, a rose wine can offer so much excitement and even more rarely can stand right next to difficult and complex dishes such as caponata with tuna fillet or a seafood carbonara with smoked eel and pecorino. After all, Moschopolis 8 belongs to a unique (and our favorite) category called “Badass Rose”, and if you taste it you‘ll understand what we mean!

We forgot to tell you that this rose wine has aging potential, but something tells us that it will not last over a month ...!

Tastes Like

It has a medium pink color with orange hues.

Intense and attractive nose, that magnetizes you from the first moment with sweet cherry, ripe strawberry, vanilla, and rose notes. After a while, tomato jam, butterscotch, Turkish delight, and toast make their appearance.

On the palate, it is rich and oily, with crisp acidity and a tiny suspicion of tannins that give a nice structure. Strawberry, cherry, sweet tomato and white pepper meet vanilla, tobacco, toasted brioche, and toffee caramel. Enjoyable toffee aftertaste that just does not end ...

with pasta with smoked eel, large fish on charcoal or stuffed tomatoes.

Ravioli with sun-dried tomato pesto and chicken

For tomato pesto

  • 200 g sundried tomatoes
  • 100 g Parmesan cheese grated
  • 80 g pine nuts
  • 1 clove of garlic
  • 50 ml olive oil

 For the chicken

  • 1 fillet of chicken
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary
  • 1/2 cup of oil
  • 1/2 lemon

For the pesto

Peel the garlic and remove the green part. Add all the ingredients to a blender and beat them until the mixture is homogenized.

For the chicken

Cut the fillet into thin strips. In a bowl, mix all other ingredients. Marinate the chicken in the mixture for at least one hour.

In a preheated  oven (200°C) , bake the chicken for about 5 minutes on each side until it gets a golden color.

Boil the ravioli according to the manufacturer's instructions.

Serve by spreading the pesto of sun-dried tomatoes over the pasta and add chicken slices on the top.
