Why do we love it?

You probably know Xinomavro by now. How about Cinsaut (or Cinsault)? First of all, it is pronounced Sanso. French red variety, resistant to high temperatures. Particularly widespread in Languedoc Roussillon in southern France but also in South Africa where it goes under the name Hermitage. Slowly it has gained a share of the world cake because if you search a bit more, it has more than 50 different names in its cultivation around the world. In Greece, its appearances are still limited.

On the other hand, you may have realized that the seven-member family of Dimitris Koutsoukis is not an ordinary family. They continue to work wonders in Oraiokastro, Thessaloniki, daring to experiment with varieties and ways of winemaking. The small boutique Kamara Winery exhibits enviable boldness and stability in the production of small diamonds, hard to find outside of Thessaloniki. Besides, it is no coincidence that Dimitris abandoned a very successful career to devote himself to wine.

Time to introduce the Rose Domaine Kamara 2017. New look, new blend. Cinsault was added for the first time in its composition, although they have been experimenting with it for years. The result is a wonderful rosé passepartout wine, which will steal the show in every circumstance.

The two varieties are cultivated in the family owned vineyard in the area of ​​Melissochori, favored by the special microclimate of the region. With a provocative bright color, light-hearted character and the makings of a world-class rose wine, Domaine Kamara Rose 2017 is about to become one of the greatest summer hits.

Why did we call it passepartout? Do you want to enjoy it on its own? Perfect! Do you want to combine it with seafood or fish? It will amaze you! Want it with pasta with red sauces or meat with light sauces? Put aside the red. This rose will excite you!

Light onion color in the glass in the style of Provence.

Floral nose with jasmine and pink rose accompanied by strawberry, sour cherry and fig. Turkish delight and sweet tomato paste and herbal notes complete the impressive aromatic bouquet.

Medium bodied mouth, particularly tasty, with intensity and noticeable acidity which balances the elaborate. Highlights of ripe fruits, strawberry, fig and jasmine give unique concentration.

Enjoy it on its own as an aperitif, combine with seafood or pasta with red sauce.

Pizza with prosciutto and arugula

  • 1/2 cup tomato sauce
  • 1 tsp. of grated red pepper
  • 1/4 tsp. oregano
  • 2 tbsps. of olive oil
  • 1 ball of pizza dough, flattened
  • 3/4 cup mozzarella, grated
  • 4 slices of prosciutto, cut into four
  • 1/4 cup mushrooms cut into slices
  • 1/2 small red onion, sliced ​​thinly
  • 1-2 tbsps. Parmesan cheese, grated
  • 1 cup of rocket

Preheat the oven to 200oC.

In a bowl, mix tomato sauce, oregano and red pepper. Apply the mixture over the flattened pizza dough. Cover with the half grated mozzarella.

Spread prosciutto, mushrooms and onion evenly and sprinkle with the rest of the mozzarella.

Brush the dough crust with olive oil and sprinkle with the grated parmesan cheese.

Place the pizza on baking paper sheet and bake until the cheese gets a golden color, about 10 to 12 minutes.

While the pizza is in the oven, put the rocket, 1 tablespoon of olive oil and a little salt in a small bowl and mix it up.

Remove the pizza from the oven. Let it cool for 5 minutes and then apply the rocket mix. Cut the pizza and serve it warm or at room temperature.
