Let's start with the basics. It is one of the few Greek rosé wines (I can only think of one more) that goes through a barrel. 8 months in a blend of new and second-use barrels, therefore the 8 in its label. Just 947 bottles that already have enough demand to disappear in a few days.

Why do we love it?

Because Moschopolis 8 has the structure, intensity and complexity that most Roses would need to stand proud on a food table. If your kind of rosé is only Provence style, you better see something else. Here we are talking about a rose that will awaken the taste buds all over your palate, one that will shake you and make you look back at your glass. Yes, all this came from a rosé wine. A razor sharp rose which will stand beside the toughest dishes. Even in smoked eel.

In Rose Moschopolis 8, Xinomavro and Syrah meet in a 50 – 50 blend from the hands of one of Greece's most experienced viticulturists, Dr Giorgos Germanis. A brand-new winery that looks like it will be of great concern to us in the future. it already sets the foundation with the very first vinification to be a delight for us. And there is much more to come.

When to drink it?

Prepare to be overwhelmed now. Do not have it on its own, though. Throw it next to a grilled mackerel or even a stuffed tomato. If you give it time to soften, it will calm down and it will be even more enjoyable. How long? 2 - 3 years for sure.

Tastes Like

Bright pink color in the glass.

Expressive nose, with strawberry, cherry and gooseberry meeting the butterscotch and vanilla. Pomegranate and green, vegetive notes gradually make their presence felt.

Concentrated mouth, with refreshing acidity that cleanses the palate and vivid fruity feel. The slightly tanic feel adds ineterest. Red juicy apple, pomegranate, cherry and blackcurrant stand out and remain in long-lasting aftertaste.

PAIR IT

Pair it with pasta with smoked eel, large fish on charcoal or stuffed tomatoes.

Ravioli with sun-dried tomato pesto and chicken

For tomato pesto

  • 200 g sundried tomatoes
  • 100 g Parmesan cheese grated
  • 80 g pine nuts
  • 1 clove of garlic
  • 50 ml olive oil

 For the chicken

  • 1 fillet of chicken
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary
  • 1/2 cup of oil
  • 1/2 lemon

For the pesto

Peel the garlic and remove the green part. Add all the ingredients to a blender and beat them until the mixture is homogenized.

For the chicken

Cut the fillet into thin strips. In a bowl, mix all other ingredients. Marinate the chicken in the mixture for at least one hour.

In a preheated  oven (200 ° C) , bake the chicken for about 5 minutes on each side until it gets a golden color.

Boil the ravioli according to the manufacturer's instructions.

Serve by spreading the pesto of sun-dried tomatoes over the pasta and add chicken slices on the top.
