Why do we love it?

Chardonnay is the number one variety in plantings worldwide and it makes sense since it has fanatics everywhere. Super adaptive and with many different styles, it's almost impossible not to love at least one!

The Adam Wines Boutique Winery from the village of Adam near Thessaloniki chose to naturally cultivate the beloved white variety in the shale lands of their vineyard. Low yields, careful and rigorous screening form the basis of Chardonnay 2017 by Adam Wines. With modern and fresh approach, they preferred not to overshadow the primary aromas of the variety with the use of oak.

As part of the process, bâtonnage and lees stirring for about 4 months, helped in order to give extra volume and complexity. The combination of finesse, vegetality and rich tropical fruit make it truly irresistible.

Just released and the truth is that it might run out in a blink of an eye, like it did last year! Do not wait too long…

Tastes Like

Lemon-green color in the glass.

Explosive aromas of melon, bergamot, grapefruit, peach, banana, lime and passion fruit. In the background vegetable notes such as green tea and grass give extra complexity points.

On the palate, medium body with crisp acidity and moderate (+) aromatic intensity. Brave doses of grapefruit, lime, citrus, lemon, lean pineapple and peach white. Distinctive dough cues give volume and oily texture. The long lasting aftertaste leaves a sense of lemon on the palate.

PAIR IT

Pair it with chicken with zucchini, grilled vegetables, fish, pasta with vegetables or alone as an interesting aperitif

Chicken with zucchinis

  • 1 kg. chicken breast
  • 750 gr. zucchinis
  • 1 onion
  • 2-3 green onions
  • 1 chicken stock cube
  • 100 ml. olive oil
  • 2 eggs
  • 2 lemons
  • Salt
  • Pepper

 

Once the breast is cut into smaller fillets, mix in a bowl half the olive oil along with the chicken stock, until a mixture is made and the chicken is dipped. Put the fillets in a non-stick pan until they are evenly browned. Transfer the fillets to a saucepan and, in the pan, add the onion and sauté it in medium heat. Then mix the onion with the chicken. Put the pot on medium heat and add 1 cup of hot water. Simmer for 20 minutes, add zucchinis and chopped green onions, plus freshly ground pepper and salt if necessary.

Prepare the egg yolk by whipping the egg whites, add the yolks, the juice from 2 lemons and finally the hot liquid from the pan.

Pour in the egg sauce, and keep churning until it has been incorporated into the food.
