Why do we love it?

Yes, and the North Dodecanese have finally entered the wine map of Greece for good! Tiny, boutique wineries, such as the Lipsi Winery impress with their amazing wines, paving the way for new efforts! In their few appearances at exhibitions and presentations, steal the show giving another dimension to the term Wine Revelations.

The joint effort of two winemakers and good friends, Manolis Vavoulas and Nikos Grylis, revives the winemaking tradition of the island and impresses with the quality and stability of their wines. The very harsh climatic conditions of the island make it extremely difficult to viticulture, requiring great effort and care on the part of producers.

Fortunately the rewards of their labors came with Aloni 2015! Assyrtiko and Athiri come together in a blend that highlights the identity of the two varieties. Once they completed fermentation in the tank, then aged 6 months in French oak barrels obtaining complexity and depth.

Athiri softens the strongly acidic Assyrtiko, adding fruity notes to the notoriously mineral sensation and the barrel is embedded discreetly, participating without covering the main characteristics of the two varieties.

Tastes Like

Straw yellow with green hues in the glass.

Rich aromas of peach, citrus and lime are accompanied by lemon flower and daisy. Discrete feel of nuts, oak and honeycomb express the light barrel touch while the minerality of Assyrtiko is pervasive in the complex aromatic profile.

In the mouth, full, expressive, with acidity that balances the rich body. Peach jam, sweet orange and salt spoon stand out and remain in the mouth in the very long salty aftertaste.

Pairs with grilled fish, shellfish and chicken dishes in the oven.

Chicken with coriander

  • 75 gr raw, unsalted cashews
  • 4 onions, finely chopped
  • 3 tbsps. of sunflower oil
  • 3 small green peppers finely chopped after removing the spores
  • 25gr fresh coriander and a little more for serving
  • 1 tsp. of coriander powder
  • ½ tbsp. of cumin
  • 6 seeds of cardamom, shriveled
  • 1 stick of cinnamon
  • 4 cloves of garlic, crushed
  • 25g fresh ginger, grated
  • 3 chicken breasts without bone and skin, cut into pieces
  • slices of lime for serving

Let the cashews soak for 20 minutes in 200ml of cold water.

Fry the onions with 2 tablespoons of olive oil until they are softened and slightly browned.

Once the nuts soften, place them in a blender along with water, onions, peppers and coriander. Blend them at moderate to high speed until they become an homogeneous, thick mixture.

Heat the remaining oil and gently cook the spices, garlic and ginger for a few minutes. Add the thick mixture and chicken, stir well and cook in moderate to high heat for a few minutes.

Add 200ml of water and let it simmer for 10 to 15 minutes or until the chicken is cooked perfectly. Allow it to absorb its liquids without drying out. Serve with rice, drizzle with a little lime juice and sprinkle with chopped fresh coriander.
