Why do we love it?

As its name clearly indicates, Chateau Le Grand Blanc is the finest white of Domaine Porto Carras. The impressive bottle, this year, came out in a smaller size, 750 ml as it was only available in magnum bottles until last year. So, this special wine can be enjoyed by a few more!

The emblematic Domaine Porto Carras doesn't need any recommendations since it's one of the oldest wineries in Greece and the one for which the PDO Melitonas Slopes was established. The fresh wind that blew on the estate lead to the birth of a new white wine that from the very first moment conquered the market! Chateau Le Grand Blanc consists of Assyrtiko, Malagouzia and Limnio in vinification blanc de noir. The blend remains 9 months in new French oak barrels and in the early months, regular battonage takes place to enhance its oily character and its complexity.

Now it's perfect, but if you can restrain yourself and leave it for 3-5 years in your cellar it will become simply epic!

Tastes Like

It has medium lemon color with golden hues.

Complex nose originally dominated by peach, citrus, pear, vanilla and white flowers such as jasmine and honeysuckle. Nuts, butter and basil gradually make their appearance.

On the palate, it has medium to full body and sharp acidity that perfectly balances the dense fruit and oily character. Notes of bergamot, citrus, pear, peach and green strawberry are blended with hints of butter, hazelnut, honey, toast and smoke. Endless aftertaste!

with lobster or crowfish dishes, large fish on charcoal or chicken dishes with white sauces.

Chicken Piccata

  • 2 chicken fillets (breast or thigh)
  • 3 tbsps. of butter
  • 3 juicy lemons
  • 150 ml. white wine (preferably Sauvignon blanc or Assyrtiko)
  • 150 ml. chicken broth, hot
  • 1 bunch of parsley
  • Olive oil
  • Flour for all purposes
  • Capers
  • Salt
  • Freshly ground pepper

First mush up, in a mortar, a pinch of salt, a few peppercorns, some lemon zest and 1 1/ tablespoon of olive oil.

Cut the fillets along with a sharp knife, creating 2 slices of each breast.

Brush the fillets with the mortar mixture by lightly massage the chicken and then flour the fillets.

In a large pan add 2 tablespoons of butter and 2 tablespoons of olive oil. When they heat up, we sauté the chicken until it gets a nice golden color and we remove it from the pan.

In the same pan add the broth and the wine. Allow to boil and then put the fillets back into the pan.

Leave it to high heat until the sauce begins to thicken slightly.  As long as the sauce cools, it will thicken even more, so do not let the whole sauce evaporate.

Add 1 tablespoon of butter, the lemon juice from the two lemons and a few slices of lemon, shake the pan and add the capers.

Remove it from the fire, add chopped parsley and serve with thin pasta, rice or boiled potatoes!
