Why do we love it?

30 km from the Spanish border and just 5 km from the Mediterranean seaside is the vineyard that makes this extremely great wine, the Cool Moon 2016! Domaine Les Enfants Sauvages means "Winery of Wild children», and as their name implies, they are uncompromising, young and energetic winemakers who see things a little differently.

Biodynamic cultivation, respect for the land and the environment, the use of indigenous yeasts rather, result in the creation of wines that perfectly reflect the terroir and the character of each variety! Cool Moon 2016 is a blend of Grenache blanc, Grenache gris, Maccabeu and Vermentino, with the first 3 coming from old vines, 90 years old! The blend is fermented and matured in foudres (1200 liters) of oak and acacia for 12 months. Then a minimum amount of sulphites is added and no other human interferance or filtration takes place.

The result is a perfectly balanced and impressively complex wine!

Tastes Like

Ιt has a pale lemon color with golden hues.

Complex nose with aromas of ripe pear and sweet bergamot accompanied by notes of vanilla, butter, honey, toast and hazelnut.

On the palate it has medium body, crisp acidity and a buttery feel. Honey, vanilla, butterscotch, walnut, hazelnut, lemon, bitter orange and grapefruit make up a complex and balanced set. Long lasting, nutty aftertaste!

PAIR IT

Pair it with Spaghetti Carbonara or chicken dishes

Stuffed chicken roll with quince and potatoes in the oven

  • 1 stuffed chicken roll
  • 1kg potatoes cut into small pieces
  • 500 gr quince cut into thick slices
  • 2 lemons (juice and zest)
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsps. Dijon mustard
  • 1 tbsp. curry powder
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1/2 cup of olive oil
  • Salt and pepper
  • 600 ml of vegetable stock

Preheat the oven to 250 ° C. Add the olive oil to the casserole, then the chicken roll, the cut quince and the potatoes.

Mix the remaining ingredients with a small portion of the stock and pour the mixture on the roll and potatoes. Add stock so that the mixture covers the potatoes.

Cover the casserole and, after lowering the oven to 150 ° C, put it in the oven. From time to time we open the casserole and check whether we need to add some water.

Once ready, uncover the casserole and raise the oven temperature. Leave it there until it's golden brown.
