Why do we love it?

Although Terra Grigia Boutari may have "white wine" written on its label, in Provence, it would be labeled as rose wine and in fact one of the most typical of its kind! Responsible for this color is the special variety that hides behind it, Mavrofilero!

Mavrofilero belongs to the large family of Fileria in Greece and as you can imagine it is the dark-colored sibling of Moschofilero. As its name implies, Mavrofilero has a darker reddish color and is more rare and expressive. Usually, it's more suitable to make rose wines but the very adventurous ones, are following white vinification.

At Boutaris Winery, they have proved that they like difficult experiments and they usually succeed in them. You see, the many years of experience and know-how are not hidden! For Terra Grigia, Mavrofilero came from a single vineyard, from the plateau of Mantinia. The maceration with the skins for 12 hours gives a strong aromatic character and a distinctive salmon color and silver hues. After the end of the fermentation, the wine matures in oak barrels and stainless steel tanks with its fine wine lees, for 6 months, acquiring an oily feeling and an intense, complex character.

Tastes Like

Terra Grigia Boutari has pale lemon color and discreet salmon hues. Intense nose with aromas of quince, pear, bergamot, lime, lemon, orange blossom, jasmine, green apple, and rose. Dough and vanilla hints complete the aromatic ensemble.

In the mouth, it has a medium body, crisp acidity, and a slightly oily feeling. Tangerine, apple, pear, lemon, bergamot, hyacinth, honeysuckle, lemon blossom, and brioche fill-up the mouth in every sip.

PAIR IT

Pair it with green salad with strawberries and goat cheese, chicken fillet with orange sauce, or fried red mullet.

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
