Why do we love it?

Gramina Vassaltis Winery is one of the most intense and exuberant Santorini wines ever made. The concentration, the structure, and the intense mineral and smoky character of Assyrtiko and Santorini are uniquely expressed in this special wine of Yiannis Valabous.

Vassaltis Winery of Yiannis Valabous is one of the most prestigious wineries of Santorini, which although relatively young has given excellent wines and has become known worldwide.

Gramina is one of its best wines and comes from a single vineyard in Vourvoulos. For Gramina the grapes are picked strictly by hand and only the best are destined for it. The wine is fermented in stainless steel tanks and matured with its lees for 12 months and then it was bottled in 1700 bottles. Finally, the wine rests for another 7 months in the cellar of the winery. The result is an ode to the greatness of Santorini and can prove to you that Assyrtiko becomes even more magical with time...

Tastes Like

Gramina Vassaltis Winery has deep lemon color and impressive nose with intense aromas of lemon, orange, citron, grapefruit, honeysuckle, smoke, flint, peach, and dried apricot.

In the mouth, it has a rich body, sharp acidity, and intense oily sensation. Dense fruits such as lemon, tangerine, lime, peach, and citron are accompanied by notes of honey, smoke, wet stone, and dough.

with grilled fish or roasted lamb with oregano and gruyere cheese, mussels with beurre blanc.

Lamb with honey and rosemary

  • 4 racks of lamb with 3 lamb chops each

for the marinade:

  • 2 tbsp chopped rosemary
  • 3 tbsp honey
  • 2 cloves of garlic, finely chopped
  • 125ml red wine

Marinade: Mix rosemary, honey, garlic and wine in a large bowl. Put the racks in and cover them with the marinade. Marinate for 10 '

Drain the racks and put them in a baking pan that has been brushed with oil. Bake for 20 minutes, or according to your preference, in a preheated oven in 200 degrees (Celsius).
