Why do we love it?

Just a few days ago it was named one of the best Greek wines by Independent. Thieves symbolize hope, the reverie. Indeed, tradition says that if in every seed you blow a thought, it will reach the people you love, no matter how far away they are. This is the name young Nikos Markou chose for his natural Savatiano from organic grapes.

Savatiano has finally moved back into the light by showing repeatedly that it gives great white wines, fresh or even long aging. Although the "stigma" of its previous bad history, makes many to be negatively biased towards it, its sucesses catch the eye and one can not help but love it. Fortunately the young winemakers know its capabilities and believe in it perhaps more than in any other Greek variety. We suspect that they know something ...

In its unique natural, without sulfur vinification, the Thieves 2016 by Markou Vineyards demonstrates that the vibrant variety can manage wonderfully even in this difficult and demanding category of natural wines.

Fourth generation of the family, Nikos Markou has taken the reins of the historical vineyard of Attica and now incorporates his modern and innovative way of thinking, together with the most modern international techniques. The results speak for themselves and Thieves 2017 show that Savatiano is between the Greek varieties that can give natural wines with character and duration.

Tastes Like

Lemon yellow color with greyish reflections in the glass.

On the nose, ripe peach and apricot are combined with quince, Turkish delight and icing sugar. Vanilla and feel of cream and biscuit complete the particular aromatic profile.

Medium volume body, intense, dry, with perfectly balanced acidity. Pepper, ginger and mint complement the quince, peach and grapefruit and all together lead to the good length, spicy aftertaste.

PAIR IT

Combine with mussels with turmeric, stuffed tomatoes and other oily dishes of Greek cuisine.

The Salad of Kalymnos - Mirmizeli

  • 2 tomatoes
  • 1 medium-sized cucumber
  • 1 medium sized eggplant
  • 1 barley rusk
  • 5-6 olives
  • 3-4 salt sardines or mackerel
  • 100 gr. Kopanisti cheese or equivalent cheese
  • Olive oil
  • Throumbi or oregano

Begin by cutting the eggplant into thick slices. Brush with some olive oil and bake in a medium heated oven until soft.

Remove the peel from the tomatoes.

Dampen the rust, lightly, and break it into chunks. In a bowl, cut tomatoes, aubergines and cucumber into even pieces.

Add olive oil, throumbi, kopanisti, according to your preference, and mix well.

Cut the fillets of the fish to 2-3 pieces, and add them to the salad. Serve the salad by garnishing with olives, a spoonful of kopanisti, and sprinkle with extra olive oil.
