Why do we love it?

Malagouzia Orange Domaine Tatsis is a Malagouzia that differs from all the others, as it has the unique style and philosophy of the Tatsis brothers in an orange version! If you know them you understand what we mean if not then a sip will definitely convince you.

Stergios and Periklis Tatsis were among the first Greek winemakers to deal with biodynamic cultivation and mild natural vinification techniques. At their winery in Goumenissa, they never stop experimenting with local varieties. Having reached Negoska to a whole different dimension, they decided that it was about time to deal with the favorite Greek white, aromatic variety, Malagouzia. Biodynamic cultivation, fermentation with indigenous yeasts, maceration with the skins for 30 days, maturation in old wooden barrels for 18 months, no filtration, and super minimum sulfites (that occur naturally from the fermentation) form the basis for a very special expression of Malagouzia.

Malagouzia Orange Domaine Tatsis does not look like the ones you have tried, so it deserves a place in your glass and in your heart.

Tastes Like

Malagouzia Orange Domaine Tatsis has a deep orange color and intense citrus aromas such as lemon, citron, grapefruit, and candied orange zest. Hints of white balsamic cream, dried apricot, lotus, and dried flowers compose a unique set.

In the mouth, it has a medium body, crisp acidity, and a slightly tannic substance. Ripe orange, quince, tangerine, citron, grapefruit, and kumquat meet on a nutty background.

MALAGOUZIA ORANGE 2020 - DOMAINE TATSIS

PAIR IT

Pair it with pumpkin soup with Moroccan spices, ginger and yogurt, chicken satay, or octopus with honey and balsamic.

Shrimps wrapped in prosciutto, with orange marmalade

  • 1/4 cup orange jam
  • 1/4 cup of white dry wine
  • 4 tsps. of fresh lemon juice
  • 1 tsps. of finely chopped ginger
  • 1 large clove of chopped garlic
  • 2 fresh onions finely chopped
  • 20 shrimp jumbo or medium-sized peeled (you can leave the tail)
  • 10 slices of prosciutto cut into half lengthwise
  • 2 tablespoons of vegetable oil
  • 10 wooden skewers dipped in water for 20 minutes
  • salt
  • pepper

In a medium bowl, mix the jam, white wine, lemon juice, ginger, garlic and onions. Add salt and pepper according to your taste.

Tosh the shrimps in the bowl and turn them to get fully covered with the mixture. Leave them for 20 minutes at room temperature. After 20 minutes, drain the shrimps from  the marinade.

Roll each shrimp with a slice of prosciutto. Put 2 shrimps in each skewer and carefully pierce prosciutto so that it doesn’t  get unfolded.

Preheat the grill to medium to high temperature. If we barbeque them, we are careful to roast them in a moderate fire. Dip the skewers in the marinade and bake until the prosciutto gets crispy and the shrimps opaque and slightly reddish, about 3 minutes on each side.

Secret:

Soak the wooden skewers in water (preferably hot) before putting them in the oven or the charcoal so that they won’t burn and tan while baking.
