Why do we love it?

In the beautiful area of ​​Zitsa, the forgotten white variety of Debina makes its dynamic return. Wines such as Primus Zitsa of the Domaine Glinavos show that it is not unjustly labeled as one of the best hidden secrets in Greece. But not for long.

There, at an altitude of 700 meters, are the privately owned vineyards of the emblematic Domaine Glinavos. Taking advantage of the currents of the Ionian Sea, the microclimate of the area is characterized by mild winters and cool summers that are beneficial for the perfect rippening of the grapes.

With "captain" Lefteris Glinavos on the wheel, one of the first oenologists in Greece, the Glinavos family is great with DeBina. Primus Zitsa 2017 was exclusively produced by the first juice of selected grapes from specific vineyards. Why such a rigorous choice? In order to incorporate all the peculiarity, complexity and intensity of the charismatic Greek variety into a white wine that will make you worship it.

Shiny golden-green color in the glass.

Purely varietal wine with distinctive aromas of citrus, peach and pear, accompanied by lemon blossom. Diffuse metallicity complements the rich, fresh bouquet.

Elegant and cool on the palate, with pleasant acidity that highlights the freshness of the fruit of the nose and pleasantly complements its full body. At the end, the intense long-lasting lemony aftertaste will remain on the palate for a while.

PRIMUS ZITSA 2017 - DOMAINE GLINAVOS

Have it on its own as an aperitif, pair it with salads, roast salmon or seafood dishes.

Pasta with seafood sauce

  • 1 tbsp. of olive oil
  • 1 onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 1 tsp. of paprika
  • 400g chopped tomatoes
  • 1 liter of chicken broth (from cube is fine)
  • 300 grams of macaroni
  • 240g pack of frozen seafood mix
  • some parsley leaves, finely chopped,and slices of lemon for serving

Heat the olive oil in a wok or a large pan. Add onion and garlic and saute them in moderate heat for 5 minutes until they are softened. Add paprika, tomato and broth and let the mixture boil.

Reduce the heat to simmer and add the pasta. Cook for 7 minutes by stirring occasionally to avoid sticking together. If you use a ready mix of seafood, defrost it and add it in the end, cooking for another 3 minutes. Season with salt pepper as desired. Finally, sprinkle with parsley and serve with slices of lemon.
