Why do we love it?

The rise of Assyrtiko and its world-class resonance is not something new. The Assyrtiko is undoubtedly the protagonist of the Greek wine scene, with many great examples coming from places other than Santorini. There is a lot of discussion about Assyrtiko from the rest of Cyclades. Tinos and Syros produce each year their own diamond-wines that turn into best-sellers immediately.

San ta Maratha 2017 of Syros Winery is one of our favorite Assyrtikos outside Santorini! And since last year’s vintage run out within 6 months of its release, we suspect that others agree with us. Nikos Chatzakis, the talented oenologist and producer behind the boutique winery of Syros Island, has set out to promote both Assyrtiko and the island of Syros. With dedication and passion on each stage, he has created a crisp, fruity white wine with mineral hints, which are typical of the variety.

Tastes Like

Pale lemon-green color in the glass.

Medium intensity aromas of lemon, lime, grapefruit, bergamot and white peach. Savory notes emphasize the variety’s character.

On the palate, it has medium (+) body, distinct freshness and oily texture. It reveals concentrated aromas of lemon, peach, pineapple, grapefruit and lime, along with hints of dough and wet stone. The delicious citrus aftertaste, is long lasting.

PAIR IT

Pair with pasta with seafood sauces, fried fish or chicken dishes

Fennel fritters

  • 1 bunch of fennel
  • 1 large onion
  • 20 ml. Ouzo
  • 150 gr. flour for all purposes
  • 1 tsp. of sugar
  • ½ tsp. of soda
  • 1 tbsp. of vinegar white
  • 130 ml. water
  • Salt
  • Pepper
  • Olive oil for frying

Chop the fennel and the onion and mix all the ingredients together in a bowl. Put the olive oil in the pan to heat up and add one by one, spoonful of our mixture. Fry them on both sides until golden brown. Serve hot.
