Kleftes Markou Vineyards symbolize the hope, the daydreaming, and the fragile nature that a Savvatiano without sulfites can have, just like the dandelion flower (in Greece we call it Klefti). In fact, according to the tradition, if you put a thought on every seed and then blow it, it will transmit it to the people you love, no matter how far away they are. This is how Nikos and Vassilis Markou chose the name for the first natural Savvatiano, from organic grapes!

Savvatiano has come out of obscurity for good, repeatedly proving that it can and does give great white wines, fresh or for long aging. Although the "stigma" of its previous bad history, makes many to be negatively biased towards it, its successes catch the eye and one cannot help but love it. Fortunately, the young winemakers know its capabilities and believe in it perhaps more than in any other Greek variety. We suspect that they know something more ...

In its first natural, without sulfite vinification, Kleftes Markou Vineyards prove that the versatile variety can make it wonderfully even in the difficult and demanding category of natural wines. The results speak for themselves and Kleftes show that Savvatiano is among the Greek varieties that can give natural wines character and aging potential.

Tastes Like

It has medium lemon color in the glass. On the nose, ripe peach and apricot are combined with sweet bergamot, citron, and white flowers. Almond, dough, and grapefruit complete the special set.

The mouth of medium body, with perfectly balanced acidity. Pear, citron, and chamomile complement quince, peach, and grapefruit to reach an enjoyable, long aftertaste.

with mussels with turmeric, stuffed tomatoes and other oily dishes of Greek cuisine.

The Salad of Kalymnos - Mirmizeli

  • 2 tomatoes
  • 1 medium-sized cucumber
  • 1 medium sized eggplant
  • 1 barley rusk
  • 5-6 olives
  • 3-4 salt sardines or mackerel
  • 100 gr. Kopanisti cheese or equivalent cheese
  • Olive oil
  • Throumbi or oregano

Begin by cutting the eggplant into thick slices. Brush with some olive oil and bake in a medium heated oven until soft.

Remove the peel from the tomatoes.

Dampen the rust, lightly, and break it into chunks. In a bowl, cut tomatoes, aubergines and cucumber into even pieces.

Add olive oil, throumbi, kopanisti, according to your preference, and mix well.

Cut the fillets of the fish to 2-3 pieces, and add them to the salad. Serve the salad by garnishing with olives, a spoonful of kopanisti, and sprinkle with extra olive oil.
