Yli 35 Papargyriou Winery is a very special wine and not only because it is orange. With your eyes closed, you would surely think you are drinking a red wine! Taste a really unique Assyrtiko and let your imagination run wild with the countless dishes that can accompany it!
If you know even a little bit about Yiannis Papargyriou, you will have understood by now that this man never gets tired of surprising us. He discovers forgotten varieties and he takes the well-known ones to their limits, always arousing our curiosity. Papargyriou has worked and experimented a lot with Assyrtiko, so he had the confidence to take the variety one step further. Yli 35, his new creation, is an Assyrtiko that is unlike any other since it is an orange and exuberant version of it. The grapes ripen at an altitude of 800 meters and are harvested overripe in mid-October. The wine is fermented with ambient yeasts and is macerated with the skins for 35 days. It is then aged in 500-liter barrels for 15 months and it is bottled unfiltered.
Yli 35 Papargyriou Winery is a wine for you who enjoy challenges and intense, robust wines! In fact, if you decant it and serve it with aged, fatty cheeses, it will reward you generously!
*Yli means matter but in Ancient Greek it also means wood (referring to the oak barrel).
