Why do we love it?
When we talk about rich, oaky white wines, with tremendous aging potential, the first thing that comes to our mind is Deka White by Oenogenesis Winery. Deka White is what we call constant value in Greek wine!

Bakis Tsalkos, having an entire Magic Mountain (and other great Greek wines) as his legacy, took his own way, that of creating great wines at his own winery, Oenogenesis Winery. After studying oenology in Montpellier and with extensive experience in St. Emillion, Bordeaux, Bakis Tsalkos brought European air into Greek wine with his return. At Oenogenesis winery, the attention to detail sets the basis for the production of some of the largest Greek wines, with very loyal fans.
His personal bet was to create an amazing white age-worthy wine, similar to these of great Chateaux. And that's exactly what he did with Deka X White of Oenogenesis Winery. Three French varieties, three different barrel types. Sauvignon Blanc (55%), Ugni Blanc (15%), and Semillon show their love for the unique terroir of Drama and in the hands of the master of this style of wine, they give a wine with sublime character. Its excellent structure and remarkable complexity make it a truly memorable wine.

After all, those who say that beautiful wines are made by beautiful people are right! If you have met Bakis Tsalkos, you understand; if not, drink Deka White and it will be like knowing him forever.

Tastes Like
It captivates you with its striking golden yellow color and its complexity. Aromas of sweet ripe yellow fruits, peach jam, and sweet quince, accompanied by notes of honey and bergamot. The delicate aromas of the barrel are beautifully integrated by giving notes of toast, roasted hazelnut, vanilla, butter, nutmeg, and tobacco. Rich body, with an oily texture, balanced acidity, and excellent structure.

with a dish of lamb with honey and rosemary, grilled shrimps or squid but a plate of yellow fatty cheese, as well.

Stuffed chicken roll with quince and potatoes in the oven

  • 1 stuffed chicken roll
  • 1kg potatoes cut into small pieces
  • 500 gr quince cut into thick slices
  • 2 lemons (juice and zest)
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsps. Dijon mustard
  • 1 tbsp. curry powder
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1/2 cup of olive oil
  • Salt and pepper
  • 600 ml of vegetable stock

Preheat the oven to 250 ° C. Add the olive oil to the casserole, then the chicken roll, the cut quince and the potatoes.

Mix the remaining ingredients with a small portion of the stock and pour the mixture on the roll and potatoes. Add stock so that the mixture covers the potatoes.

Cover the casserole and, after lowering the oven to 150 ° C, put it in the oven. From time to time we open the casserole and check whether we need to add some water.

Once ready, uncover the casserole and raise the oven temperature. Leave it there until it's golden brown.
