A unique cheese from Crete, crafted by Steiakakis, combines sheep and goat milk from carefully selected Cretan breeds with Xinomavro wine lees.
This cheese stands out as a fusion of buttery and aromatic dry anthotyro cheese with red wine. Its special and original recipe involves drying the anthotyro cheese and “baptising” it in Xinomavro wine lees, resulting in a unique texture, intensity, and wine aromas.
It’s an excellent addition to any cheese platter and can enhance the flavour of pasta dishes with meat, such as spaghetti with minced meat, ragout, and braised veal. It pairs exceptionally well with Xinomavro, Nebbiolo, and robust red wines.
