Salame Finocchiona is a typical salame from tuscany. From pork and fennel seeds, it is extremely aromatic and rich. It is perfect on its own, on cold cuts plateau and on top of pizzas.
Its spicy character seeks for a white wine with plenty of fruit, acidity, and hints of sweetness. Pair it with a Riesling or an aromatic Malvasia.
