Why do we love it?
They were among the pioneers of the category and while at first some looked at them very cautiously, then they not only got impressed by them but also followed them in the application of the same cultivation and winemaking techniques. Kontozisis winery, which is located in Karditsa, Thessaly, and from the day it was founded, in 1991, until today blindly defends organic farming, using zero chemicals, and ultimately the production of completely natural wines.
 
Andreas Kontozisis and Aphrodite Tousia, fought stubbornly for the promotion of their place and the terroir of the region and of course, they were justified, when they became one of the first to receive the certification of organic cultivation, while their wines made a splash in the United States.
 
The harvest is done only by hand, the yields of the vines are extremely low, free-flowing juice is always used, and the yeasts are only indigenous. This is the basic principle of producing completely natural wines, and as you understand, nature is grateful to them, resulting in the quality of the fruit being unique and their wines simply stunning.
 
Clear Skies Fear No Bolts is a blend of 60% Malagouzia, 25% Xinomavro, and 15% Assyrtiko, vinified separately, in a combination of white and rosé vinification, while the Malagouzia has remained for 2 months in concrete eggs, enhancing its complexity result.

Tastes Like
In the glass, it is light amber with orange highlights. Intense aromas of honeysuckle, lotus flower, apricot, bitter orange, citrus. Soft notes of brioche and dough, framed by spicy aromas of cardamom and white tea.
 
In the mouth, it has a medium body and medium(+) acidity, with a slightly tannic character and subtle oiliness. The aromas of peppermint, orange, blossom honey, kumquat, peach compote, and green tea dominate. Macadamia nut notes further enhance the finesse and long-lasting aftertaste.

PAIR IT

Pair it with lemon-baked chicken with potatoes, lamb chops, and smoked fish

Chicken with zucchinis

  • 1 kg. chicken breast
  • 750 gr. zucchinis
  • 1 onion
  • 2-3 green onions
  • 1 chicken stock cube
  • 100 ml. olive oil
  • 2 eggs
  • 2 lemons
  • Salt
  • Pepper

 

Once the breast is cut into smaller fillets, mix in a bowl half the olive oil along with the chicken stock, until a mixture is made and the chicken is dipped. Put the fillets in a non-stick pan until they are evenly browned. Transfer the fillets to a saucepan and, in the pan, add the onion and sauté it in medium heat. Then mix the onion with the chicken. Put the pot on medium heat and add 1 cup of hot water. Simmer for 20 minutes, add zucchinis and chopped green onions, plus freshly ground pepper and salt if necessary.

Prepare the egg yolk by whipping the egg whites, add the yolks, the juice from 2 lemons and finally the hot liquid from the pan.

Pour in the egg sauce, and keep churning until it has been incorporated into the food.
