Why do we love it?

It's probably the most unorthodox blend you've ever heard. Us too. The Arlekinon Chora Red is a red wine of Cabernet Sauvignon and Assyrtiko!

As everything indicates, the boutique winery of the Arlekinon Chora did not come to make another one of the same. As Konstantinos explained to us, their inspiration was the Rhone wines. It is common to blend reds with a small percentage of white varieties that give a lighter and more elegant character to "hardcore" red varieties.

The organic vineyards of the beautiful Arlekinon Chora winery are located at the foot of Mount Narthakio in Thessaly, at an altitude of 380m. The Liapis family cultivates the Cabernet Sauvignon and Assyrtiko, keeping the field yields low.

The Arlekinon Chora Red is extremely tasty, with a crisp acidity and a very discreet barrel somewhere in the background. This is because the barrels used are second and third use so that they do not touch the fruit at all, but slightly soften the tannic essence of Cabernet Sauvignon. Asyrtiko, on the other hand, adds a little acidity and freshness to Cabernet. When almost all red wines smell vanilla and tobaco, the Arlekinon Chora Red looks like a fruit oasis ...

With its slightly pricked alcohol (14%) and its juicy tannins, we are looking forward to winter cold nights by the fireplace, with beef steaks being simmering!

Tastes Like

Deep purple with violet reflections in the glass.

Elegant nose with notes of juicy sour cherry, black cherry, blackberry, green pepper, vanilla, black tea, skin and paprika.

The mouth has medium (+) volume body, with balanced but refreshing acidity and juicy, well-worked tannins. Cherry, sour cherry, wild strawberry, tea, pepper, toffee and cocoa complement a very interesting and tasty palate. The long lasting after-taste will leave a black tea feel in the mouth.

Pair with pork chopsticks, pepper fillet or roasted beefsteak with rice.

Beef stew with tomato sauce and pasta

For the stew

  • 1 kg beef
  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 1 glass of red wine
  • 1 tbsp. of tomato paste
  • 1 kg fresh tomatoes, finely chopped
  • 1 potato (whole)
  • 1 cinnamon stick
  • 2 grains of allspice
  • 1 glass of boiling water
  • Salt
  • Pepper

 

For pasta

 

  • 1 pack of spaghetti
  • grated Parmesan
  • 1 tablespoon of butter

 

Wash the meat well, cut into large pieces and season well.

Saute the meat in some olive oil until it gets an even color, and turn it regularly to keep it from sticking.Once it’s evenly browned, add the red wine in the pan.

Add onion, tomato paste, fresh tomatoes and a whole potato (to help the sauce thickens).Add a teaspoon of sugar (to lower the acidity of the sauce), salt according to preference, 2 berries of allspice, cinnamon stick and a glass of boiling water.

Cover the casserole (leaving a small opening to breathe), let it simmer, and stir occasionaly.If the sauce is over reduced until the meat is cooked, add a little more water. after that remove the meat from the pot and place it on a platter. Put the sauce (along with the potato) in a blender, to make it velvety and then, return it to the pan. Bring it back to boil along with the meat until it is tender.

Shortly before the meal is done, boil the spaghetti in salted water according to the package instructions. Season well, add a tablespoon of butter and serve immediately after you sprinkle with grated cheese. Add as much sauce as you want and a piece of meat per serving.
