Why do we love it?

ATMA means soul. And Apostolis Thymiopoulos has repeatedly demonstrated that he has plenty. His wines too. After the great success and world-wide recognition, he devoted himself to one «project» as he calls it, only for the international markets. A new series of experimental wines from special and original blends.

What is original about ATMA Red 2021? His favorite Xinomavro, the leading Greek variety and the pride of Naoussa, met Mandilaria cultivated in the lava land of Santorini. Definitely not your every day blend. Difficult, recalcitrant and grumpy varieties, both with a strong tannic structure, they have us accustomed to waiting for years (perhaps decades) in the barrels and the bottle before softening enough and eventually becoming enjoyable to our palate.

ATMA Red comes from the harvest of 2021. The label says "smooth and fruity." Is it ever possible?

Apostolis Thymiopoulos, leader of the Garage Wines of Bordeaux trend in Greece, changes everything with a wine that although fresh and unoaked, it features unique finesse, freshness and fruity character.

Tastes Like

Bright ruby ​​color with subtle purple hues in the glass.

Not at all shy nose. Strawberry, pomegranate, cherry and blackcurrant impress with their intensity and purity. Leather, green pepper and licorice follow.

Cool mouth, moderate (-) volume, full of red fruits. The soft, velvety tannins and sweetness of alcohol make the fruit even more lively in the mouth, with strawberry, sour cherry, cherry and blueberry having a field day. The good lenth aftertaste leaves a fruity and refreshing mouthfeel.

Enjoy it on its own or pair it with light yellow cheese or pork chops with tomato jam

Pork chops with tomato jam and crispy leek

  • 1/4 cup extra virgin olive oil and 6 extra tablespoons (for leek)
  • 1 fresh onion, sliced
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes finely chopped
  • 2 tablespoons of mirin (or white wine vinegar and 1 tablespoon of sugar)
  • 4 pork chops (about 2 cm thick)
  • salt and freshly ground pepper
  • 1 leek (white part only) well washed

Preheat the oven to 200 degrees. Heat 1/4 cup olive oil in a pan. Add the onion and the garlic and cook until they become transparent, about 3 minutes.

Add tomatoes and mirin (or vinegar and 1 tablespoon of sugar). Boil while stirring to moderate heat, until the mixture becomes almost dry or about 15 minutes.

Heat 2 tablespoons of olive oil in a large pan. Season the steaks with salt and pepper. Sauté until they get a nice golden-brown color, about 1.5 minutes on each side. Transfer them to a baking pan and roast them for about 5 minutes in the preheated oven.

Add the remaining 4 tablespoons of olive oil to the pan. Chop the white part of the leek. Add the leeks to the hot olive oil and fry until crisp.
