It may be difficult or impossible to find and buy a bottle of Screaming Eagle but that's why we are here, to introduce you to El Alma de Jonata 2005, a top Californian wine with 95pts by Robert Parker. Jonata winery is located in the Santa Ynez Valley and is the little "sibling" of the legendary Screaming Eagle. This itself is capable of getting goosebumps to any wine lover. The good thing is that Jonata is much more than just this. Its vineyards cover 33 hectares which are cultivated without chemicals and pesticides. In these areas, they grow fruits and vegetables and have their own animal farm, in the logic of sustainable cultivation. The viticulturist, Ruben Solorzano, closely monitors the vineyard to ensure the best fruit quality and then takes over the oenologist, Matt Dees, who divides the vineyard into 150 different plots which he vinifies separately to have many options for blending at the end.

For Jonata El Alma de Jonata 2005 the blend consists of 95% Cabernet Franc and 5% Cabernet Sauvignon. The wine ages in French oak barrels, 70% new, for over 18 months. The final touches to the wine come from the maître of the genre, Michel Rolland.

Tastes Like

El Alma de Jonata 2005 has a deep purple color and intoxicating nose, full of plums, blackberries, cherries, licorice and cassis. Notes of vanilla, pepper, purple flowers, tobacco, eucalyptus, cedar, graphite and black olive complete the impressive bouquet.

In the mouth, it has a rich body, high but ripe tannins, and crisp acidity. Cherry jam, ripe plum, bilberry, and raspberry are mixed with notes of spices, cigar, chocolate, and lavender.

PAIR IT

Pair it with braised beef with vegetables, striploin with aromatic herbal butter, or a roasted pork knuckle with red wine sauce.

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
