Why do we love it?

Dame Rouge III Day 18 Jima Winery is a unicorn wine of unique beauty and complexity and exceptional rarity. From late harvest, partially dried grapes (appassimento) and with 15% alcohol it is a wine reminiscent of Amarone that you can cut with a knife, we are talking about such tremendous concentration!

Panagiotis Jimas is already known and one of our favorite winemakers. From his hands we have drunk miracles or in simply put, wines with attention to detail and mastery of balance. His brilliant course began in 2013 when he started setting up his own vineyard in Kalomodia, Arta. At the same time, he started the WSET Diploma, one of the most important titles in the world, which he accomplished a few years later.

Having acquired the know-how and recognizing the soil potential of the area, he decided to plant Merlot and Cabernet Franc. The vineyard is located a few kilometers away from Amvrakikos gulf and so the soil is rich in clay, calcium and marine fossils. This type of soil is responsible for some of the most robust and rich red wines in the world.

So is the Dame Rouge III Day 18 Jima Winery which consists of  late harvest Merlot and Cabernet Franc, while a portion of the grapes pass through the appassimento method, used for Amarone. The wine fermented with selected yeasts and matured in a new French oak barrel, for 12 months. It was bottled unfiltered in limited bottles, labeled by an artist, a friend of Jimas family.

Tastes Like

It has deep ruby color and intoxicating aromas of berry, cherry jam, sour cherry, dried prunes, vanilla, chocolate, cinnamon, pepper, tobacco, eucalyptus and leather.

In the mouth it has a rich body, intense but very ripe tannins and moderate (+) acidity. Ripe and jammy red and black fruits are mixed with notes of cocoa, tobacco and sweet spices.

Perfect pairing with spare ribs with spices, lime and soya sauce, pork stew with plums, slow braised wild boar with petimezi

Willd boar with vinsanto and citrus

1500 gr. wild boar


For the marinade
500 ml. wine vintage
200 ml. Red wine
1½ tablespoons of honey
3 tablespoons of balsamic
2 tablespoons of soy sauce
1 tablespoon corn flour
2-3 rinds of tangerines, oranges, grapefruits, bitter orange
1 sprig of rosemary
2-3 cloves
4 berries of all spice
1 teaspoon of mixed peppercorns
Taragon
2 onions
80 gr. butter
Salt

For the marinade:
Wash and clean the wild boar very well, and remove any hairs.
In a pot, put all the ingredients of the marinade and mix well. Place the pieces of wild boar inside.
Cover with a towel and leave either in the fridge or in a cold, dry environment. Let the wild boar marinate for at least 12 hours.


Cooking:
Remove the meat from the marinade and keep it aside.
Put a large casserole to high heat and saute the meat.
Do not put any oily substance because the meat will release some liquids.
Once the liquids evaporate, add the butter and saute the meat until it gets an even, brown color.
Add the onions finely chopped or crushed. Once the onions get a golden color, pour in the marinade.
Lower the fire. Add salt and about 2 cups of hot water.
Braise the wild boar until the sauce thickens and the meat is tender.
Serve with brown rice with added pine nuts and raisins.
