Why do we love it?

Bakis Tsalkos is known as the "conductor" in the creation of sophisticated aged white wines (Magic Mountain, Deka X White). The Deka X Red 2009 is the proof that his talent is not limited there. Surely you remember the Deka X Red 2009, which was a bomb of sophistication and condensation! The vintage of 2010 is even better and it’s Bakis’s favorite red so far!

Merlot (50%) and Xinomavro (50%) have joined forces in an amazing red wine, which having spent 24 months in oak barrels from 3 selected, different forests, has gained unique complexity and texture! In any case, Bakis does not hurry at all to get his wines on the market. He waits for the ideal moment, the one that will make you so excited about his creation that you will want to thank him for it. Judging by the fact that the 2010 vintage has just been released, you understand that he has a lot of patience.

When to drink it?

Now it's perfect, but if you have patience, it will age beautifully for at least 10 years! To enjoy it even better, we recommend that you decant it for half an hour before enjoying it.









Tastes Like

Moderate ruby color ​​in the glass, with burgundy shades.

Nose of moderate (+) aromatic intensity dominated by spices such as cinnamon, nutmeg, anise, licorice and pepper. After a short time, dried fig, plum, cherry and raspberry complemented by notes of coffee and bitter chocolate make their appearance. Oak, leather, sun-dried tomatoes and flowers, keep making this wine interesting by constantly evolving!

Medium (+) volume body with balanced acidity and moderate, silky tannins! Generous on the palate, with cherry, plum, raspberry, nut, hazelnut and coffee having the first say. Notes of caramel, vanilla, tomato sauce, nutmeg and mushroom add extra sophistication points. The persistent dry-fruit aftertaste will delight you!

Accompany it with smoked steaks, game dishes, osso buco ,lamb and yellow cheese.

Pork tenderloin with sun dried tomatoes

  • 2 pork tenderloins (fillet), each about 300g, with the excess fat removed
  • 1 tbsp extra virgin olive oil
  • 2 cloves of garlic, finely chopped
  • 2 tbsps. chopped fresh thyme
  • 1 tsp. of salt
  • 1/2 tsp. of freshly ground black pepper
  • 2 tsps. of butter
  • 1/2 cup of red wine
  • 1/2 cup chicken broth (or a chicken broth cube and half a cup of water)
  • 5 sun dried tomatoes cut to 4
  • 3 tbsps. of cream

Preheat the oven to 200 ° C.

Brush the meat on both sides with the half olive oil. Rub with garlic, thyme, salt and pepper.

In a stainless-steel pan, heat the remaining olive oil and butter to medium-high heat. When it’s hot, add the fillets and cook until golden brown on both sides, about 5 minutes. Place the fillets in a baking pan and place them in the hot oven. Let them cook for 12 to 15 minutes.

Remove the meat on a platter and cover it with foil to keep it warm. Put the remaining juices of the pot back in the pan.

At moderate to high temperature, add the wine by stirring to keep it from sticking. Add chicken broth and slices of sun-dried tomatoes. Lower the temperature and simmer for 2 to 3 minutes. Then add the cream and stir well to mix it up.

Cut the fillets into chunks and spread them on a platter. Pour the hot sauce over them with a spoon and serve immediately.

We recommend serving with long-grained rice.
