Why do we love it?

Comando G, the daring duo who transformed humble Garnacha into a variety capable of standing shoulder to shoulder with the Pinot Noirs of Burgundy, have raised the bar even higher with Las Iruelas 2023. Here we have a wine of true “Grand Cru” calibre which, while remaining ethereal and irresistibly charming in its youth—as is the hallmark of the estate—also possesses the concentration and structure required to age and evolve beautifully over time. Las Iruelas is one of the very few wines in the world that can boast scores consistently above 96, while the 2023 vintage was awarded an impressive 98 points by Parker. 

Las Iruelas 2023 Comando G originates from the eponymous vineyard, perched at an altitude of 1,000 metres in the Gredos mountain range. The Garnacha vines are over 75 years old, and according to the producers, this site contains the most complex soils of all their vineyards. Sand, granite and slate each contribute their own layer to the wine’s complexity and structure. Viticulture is organic, and harvesting is done by hand due to the challenging access, as well as to ensure the collection of whole clusters—an essential part of their winemaking philosophy. 

In the winery, the sole aim is to capture the energy and magic of the place in your glass, pure and unadulterated. Fermentation takes place with whole clusters and indigenous yeasts in open oak vats, while ageing lasts 16 months in 500L French oak barrels and cement tanks of various sizes. The wine is bottled unfiltered, preserving the full expression of its character in the bottle. 

Las Iruelas 2023 Comando G is a wine that rightfully deserves a place in every serious collector’s cellar. 

Tastes Like

On the nose, it is refined and complex, with aromas of wild strawberries, raspberry, cranberry, dried rose petals, pepper, roasted red pepper and delicate hints of forest floor. 

On the palate, it is silky, with medium-plus body, vibrant acidity and tannins of velvety texture. Each sip bursts with the energy and freshness imparted by the granitic soils and altitude. Flavours of strawberry, cherry, pomegranate, dried herbs and pepper dominate, while the finish is seemingly endless.

Comando G
Friends from college, Daniel Landi and Fernando Garcia decided to combine their passion for wine and search the Sierra de Gredos for small, inaccessible parcels and grow with the Garnacha variety. Vineyards aged 50 to 80 years, biodynamic cultivation, high altitude, manual harvest, oak barrels, foudres and amphorae. The result of all this is the production of sensational single vineyard wines from the Garnacha variety.

PAIR IT

Pair it with roast duck with a red fruit sauce, wagyu Bolognese, slow-cooked beef with mushrooms and red wine, or even grilled skirt steak with chimichurri. 

Roast beef with sweet potato puree and gravy

For the Roast Beef
-1200 g Beef fillet
-1 clove of garlic
-10 g dried mushrooms
-30 g butter
-20 g olive oil
-1 tablespoon peppercorns
-1 sprig of rosemary
-2-3 thyme sprigs
-Sea salt

For the sweet potato puree
-1000 g red sweet potatoes
-100 ml. milk cream
-50 ml. milk
-40 g butter
-3-4 sage leaves
-½ teaspoon white pepper
-Sea salt

For the gravy
-300 ml. beef stock
-10 g dried mushrooms
-1 teaspoon flour
-20 g brown sugar
-2 tablespoons of Worcestershire sauce
-25 g butter
-1 large orange
-Freshly ground pepper

For the sweet potato puree
Bake sweet potatoes by wrapping them in baking sheet and baking them at 200 ° C for as long as needed (about 1 hour).

Pierce them with a fork to see if they are cooked, then peel them, mush them up and keep them warm.

Boil the milk and cream along with the leaves of sage over low heat, remove the leaves and add the sweet potatoes. Then season well, taste it and correct the seasoning.

Mix and after you remove it from the fire, add the butter.


For the Roast Beef
Band the fillet with a string or ask the butcher to do it.

Grind in the multi the dried mushrooms, peppercorns, herbs and some salt. Preheat the oven to 200 ° C and in a hot saucepan sauté the fillet on a very high heat.

When it gets a nice color from all sides put it on a roasting grill and below it put a baking pan.
Brush the fillet with butter and spread the mushroom-herb mixture evenly.

Bake the fillet in the lower shelf of the oven for about 50 minutes at 200 ° C, for a medium baking. If you want your fillet well done, continue for about 15 minutes. For rare, cook it for only 35 minutes.

Once you remove the fillet from the oven, wrap it well with foil, leaving it to rest for at least 40 minutes before serving.


For the gravy sauce
Soak the mushrooms in the stock for as long as possible.

In a thick bottom pot, place the butter and once it is melted, add the flour, by stirring continuously until it gets an amber color, then lower the heat to the minimum.

Add the broth after removing the mushrooms and all other ingredients.
Stir continuously until the sauce thickens, taste it and, if necessary, add more salt.

Serve the sliced roast beef, with sweet potato puree and gravy on top.
