Look, the king is naked! In Les Escures of Fabien Jouves, the king of Cahors, Malbec, is completely stripped of additives, sulfites, oak and anything that can mask its dynamic character. Yes, we are talking about a single-vineyard Malbec of mild natural vinification! Can it get any better? Of course, see below!

Fabien Jouves is a true - born of Cahors. Cahors is located just outside Bordeaux and is home to Malbec. Fabien’s family owned vineyards that were passed down from generation to generation and were cultivated with passion for years but weren’t used for making private labeled wine. They were giving the grapes to local cooperatives, until in 2006 everything changed. Fabien set up the boutique Mas Del Perie winery on Trespoux Hill and chose the best vineyards, the best parcels, and the best soils to apply biodynamic cultivation and make his own epic wines. The return to roots and purity was absolute, as he wanted to make natural wines, without additives or other interventions. It didn't take long to draw well-known wine critics’ attention like Robert Parker and the whole wine world to talk about the young and pioneering winemaker who makes Malbec like no one has ever dared. He divides his wines into 2 categories: thirst-quenching wines and terroir wines.

For the latter, he follows the philosophy of Burgundians and vinifies each vineyard separately to highlight the particular terroir and the different aspects of Malbec. Les Escures comes from a vineyard in 350 meters altitude, with 25-year-old vines. Harvest is always done manually and only the best grapes are selected, which are later macerating for 30 days and ferment in concrete tanks with indigenous yeasts. After the end of fermentation, the wine matures for 6 months on its fine lees.

It has deep purple color and impressive aromas of red and black fruits such as cherry, plum, blueberry, and cassis accompanied by notes of spices and tobacco.

PAIR IT

Pair it with spaghetti Bolognese, tuna fillet with soy sauce or pork tenderloin with bordelaise sauce.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
