The production process of Tselepos Estate's Amalia Vintage 2018 is significantly different from that of Amalia Brut. The excellent quality raw material came from a single vineyard in the Perpatiara area. The year 2018 was ideal, bearing absolutely healthy fruit. After the first alcoholic fermentation, the base wine was bottled with a small amount of sugar in order to start the second (autolytic) fermentation in the bottle, following the laborious, traditional method of Campania (methode traditionelle).
He remained there for almost two years. With daily turning of the bottle (riddling) the remaining yeasts were removed and in the final stage the Liqueur d`Expedition (same wine with added must) was added to balance the high levels of acidity and cover any process losses.
