Domaines Ott is located in Provence and has under its roof 3 different wineries in 3 different areas of Provence! Château Romassan is one of them, located in the heart of Bandol. Bandol is famous for the boldest and age worthy rosés in Provence, since by law they have to mature in a French oak barrel. Domaines Ott Château Romassan Bandol is like the case study wine of Bandol without losing, not even for a second, the elegance that characterizes the wines of Provence.

The blend consists of Mourvèdre, Grenache, Cinsault and Syrah. Mourvedre is responsible for the structure and the aging potential while all the other varieties contribute with their fruit, flowers and spices to the final blend. The wine ages in oak casks for 8 months, along with its fine wine lees. The result impresses with its freshness, oiliness and structure and rascally winks at the future.

It has pale salmon color and impressive nose with aromas of strawberry, cherry, pomegranate, brioche, vanilla, white pepper, rose, pink grapefruit and white flowers.

In the mouth it has medium (+) body, oily texture and crisp acidity. Juicy red fruits are mixed with notes of citrus, peach, dough and minerality.

Chateau Romassan is located in the heart of Bandol and under the roof of the famous Domaines Ott in Provence! The estate was acquired in 1956 and it took 30 years to re-produce great wines typical of the Bandol area. Typical local varieties such as Mourvèdre, Grenache, Cinsault and Syrah. Its recognizability and the shape of its bottle, transcends the borders of France and makes it known to the whole world!

PAIR IT

Pairs very well with orzo with langoustines and bisque, scallops with chorizo and cauliflower puree, pork skewers marinated with orange and herbs

Spaghetti with shrimps, lemon and fennel

1 pack of spaghetti No6, whole-wheat
800 gr. shrimps
2 lemons
5-6 cloves of garlic
1 little bunch of fennel
ground pepper
sea salt
chili flakes
butter

Carefully peel and cut the shrimps’ heads. Place them in a pot with 300ml water and boil them, along with 3 cloves of garlic for 15 minutes. Then, filter the broth with a sieve, by pressing it well and keeping it warm.

At the same time, boil the spaghetti in salted water and cook them “al dente”. Take the lemon zest and chop the fennel.

In a large pan, pour 40 gr butter and the rest of the garlic. Once the olive oil is warm enough, remove the garlic and add the chili flakes.

Place the peeled, boiled shrimps in the hot pan and leave them for 1-2 minutes on each side. Season with salt and pepper, add a little fennel, a bit of lemon zest and pour in the lemon juice.

Remove the shrimps and in the same pan, place the spaghetti directly from the pot and increase the temperature. Add the broth you have prepared and mix well.

When the spaghetti have absorbed all the broth, sprinkle with fennel, pepper and the remaining zest. Serve the spaghetti with shrimp immediately.
