You know that we are suckers for good stories and Chateau La Tour de l'Eveque has plenty. We will tell you our favorite before we get into the subject. The area around the Chateau suffered from water scarcity because, according to the myth, the owner's wife poisoned the well with her tears when he left for the crusades. When the pioneer Gabriel Sumeire took over in 1958, he managed to link the property to the Font-Freye spring conveying the water by gravity to the Dolphins’ fountain, the symbol of the Chateau.

The winery's course after that is well-known, since Petale de Rose, Chateau’s flagship, is now found in all cosmopolitan restaurants, selling thousands of bottles per year. La Source de Gabriel is the result of Regine Sumeire, from Chateau La Tour de l'Eveque, joining forces, with her cousin from the neighboring Estate, Font Freye. We loved it for its pale, Provence-like color and its classic French finesse. The blend consists of 55% Grenache, 30% Cinsault and 15% Syrah and the grapes come from the family's privately own vineyards.

with sushi and salmon or shellfish dishes.

Couscous salad with strawberries and goat cheese

For the salad

  • 100 g goat cheese
  • 150 grams of couscous with lemon and mint
  • 3-4 strawberries
  • 50 g baby spinach
  • 2 fresh onions
  • 2 tablespoons of almond shavings
  • 1 tbsp of pine nuts
  • ¼ bunch of coriander
  • 5-6 mint leaves 

For dressing

  • 3 strawberries
  • 2 tbsps. of white balsamic or apple vinegar
  • 3 tbsps. of olive oil
  • 2 tbsps. of water
  • 1 tbsp. of brown sugar
  • Freshly ground black pepper
  • Salt

Directions

In the food processor (multi), we blend all the ingredients for the dressing.

Prepare the couscous with mint and lemon, according to the packaging instructions, in a spacious bowl.

Roast the pine nut and almond and add half the amount to the couscous.

Chop onions, mint and coriander, add them to the couscous with the half of the dressing that we prepared and mix together.

If there is time, let the salad to "marinate" inside or outside the refrigerator.
