Why do we love it?

If you are thinking of a celebration, you have found the right champagne! Maxim's Champagne is that playful form of bubbles that you want to have with you at every festive table. Without losing its French finesse, it manifests itself less strictly and more dancingly than many others!

It was made to order for the famous French restaurant Maxim's de Paris in collaboration with a well-known house in Celles-sur-Ource in the Aube. Only privately owned grapes are used for its production, while its aging takes a much longer period of time than the law stipulates. Maxim's Champagne has several medals and distinctions in its history which, combined with its light and elegant form, make it perfect for a gift!

Maxim's Champagne is produced from the 3 main French varieties used in Champagne, Chardonnay, Pinot Noir and Pinot Meunier. The dominant Pinot Noir gives it its rich body while the Chardonnay gives it elegance and the Pinot Meunier complements its fresh aromas. Maxim's Champagne spends 12 months on its lees and 24 months in the house's cellars in the bottle before its release!

Tastes Like

In the glass it has a golden amber color and a long foam. Aromas of white flowers and citrus fruits are the first to emerge, while brioche and dried fruits take the lead.

The mouth is full, oily, with the fresh fruit prevailing and the foam giving a refreshing sensation! The aftertaste is long and bready.

Pairs very well with french fries with truffle, beaufort souffle, linguine with sea urchin and lemon

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
