Kostaki Winery, founded in 2023 in Samos, is the result of Evmorfia Kostakis' passion for wine. After studying Chemistry and Oenology in Greece, France, and Italy, Evmorfia (currently a Stage 2 Practical Only Master of Wine student) returned to Samos to establish her own winery. Together with Lorenz Immerfall DipWSET, they have created a winery that blends tradition with innovation, honouring the island and Muscat in a unique way. Their goal is to create wines with a more restrained aromatic profile that will highlight the "hidden" virtues of Muscat Blanc à Petits Grains.  

Pet Nat Kostaki Winery is made from 30-year-old high bush vines. It is produced using the ancestral method, dating back to the 16th century. The process involves bottling the wine before the first fermentation is complete, creating natural bubbles inside the bottle. The wine matures in the bottle, with its gross lees, for 7 months and unlike most pet nats it is dry (brut nature). During disgorgement, 10 ml of orange wine is added for extra structure and complexity. The result? A sparkling wine with unique freshness and complexity that will win you over from the first sip.

Tastes Like

It has pale lemon-green color and rich mousse. Elegant aromas of lemon, green apple, pear, citron and lemon blossom are blended with notes of dough.

On the palate it is light, with crisp acidity and persistent bubbles, with green and citrus fruits dominating.

PAIR IT

with fresh white cheeses, cold appetizers and light seafood dishes such as shrimp cocktail and clams with white wine and parsley  

Shrimps wrapped in prosciutto, with orange marmalade

  • 1/4 cup orange jam
  • 1/4 cup of white dry wine
  • 4 tsps. of fresh lemon juice
  • 1 tsps. of finely chopped ginger
  • 1 large clove of chopped garlic
  • 2 fresh onions finely chopped
  • 20 shrimp jumbo or medium-sized peeled (you can leave the tail)
  • 10 slices of prosciutto cut into half lengthwise
  • 2 tablespoons of vegetable oil
  • 10 wooden skewers dipped in water for 20 minutes
  • salt
  • pepper

In a medium bowl, mix the jam, white wine, lemon juice, ginger, garlic and onions. Add salt and pepper according to your taste.

Tosh the shrimps in the bowl and turn them to get fully covered with the mixture. Leave them for 20 minutes at room temperature. After 20 minutes, drain the shrimps from  the marinade.

Roll each shrimp with a slice of prosciutto. Put 2 shrimps in each skewer and carefully pierce prosciutto so that it doesn’t  get unfolded.

Preheat the grill to medium to high temperature. If we barbeque them, we are careful to roast them in a moderate fire. Dip the skewers in the marinade and bake until the prosciutto gets crispy and the shrimps opaque and slightly reddish, about 3 minutes on each side.

Secret:

Soak the wooden skewers in water (preferably hot) before putting them in the oven or the charcoal so that they won’t burn and tan while baking.
