Why do we love it?

Now if we tell you that we found an incredible rosé from Tuscany you will say that maybe we went crazy. But if we tell you that the awesome naturalista winemaker Stefano Amerighi, who has taken biodynamic farming to another level, made a gastronomic rosé from Syrah, the Syrah Rosa Stefano Amerighi, then you will change your mind.

Stefano Amerighi started his career with a vision to create a top Syrah in Italy, based on biodynamic farming and traditional family winemaking techniques. Searching for the right piece of land to fulfill this vision he ended up in Cortona, Tuscany. Both climatic and soil studies led to the selection of this piece of land. All that was missing was the right Syrah clone that he found and brought from the Rhone Valley. The cultivation of the land is exclusively biodynamic and, in the winery, he follows practices of mild natural winemaking. After Stefano's big red wine from Syrah, a little sibling, Syrah Rosa Stefano Amerighi, emerged. The wine fermented with ambient yeasts and matured with its wine lees for 4 months in stainless steel tanks. Chemicals and sulfites are not used at any point in the process. The wine is bottled unfiltered and is truly incredible.

Tastes Like

Syrah Rosa Stefano Amerighi has pale salmon color and elegant aromas of cherry, raspberry, cranberry, strawberry, dough, white flowers and icing sugar.

In the mouth it has medium body and refreshing acidity. The red fruits are the protagonists here as well, but they are complemented by notes of pepper, ginger and sourdough bread.

SYRAH ROSA 2021 - STEFANO AMERIGHI

PAIR IT

Perfect pairing with pizza Margherita, spaghetti with tomato sauce, Caprese salad

Spaghetti with sun-dried tomatoes, pecorino and basil

500g wholegrain spaghetti 
150g of sun-dried tomatoes
150g of pecorino
20g black raisins
1 clove of garlic
6-7 basil leaves
6-7 cherry tomatoes
80ml olive oi

Boil plenty of water in a large saucepan, add generous doses of salt and cook the spaghetti for 6-8 minutes. Drain them and keep a cup of the pasta water.

Put the sun-dried tomatoes, raisins, garlic, basil leaves, half of the pecorino and olive oil in the blender.

In a large frying pan put the pesto you just prepared, add the pasta and half of the pasta water, mix well and if necessary add a little more pasta water.

Add some freshly ground pepper, the cherry tomatoes cut in two, 2-3 tablespoons of pecorino and remove from the heat.
Serve with basil leaves and pecorino.

Recipe Notes:
- If you use dried sun-dried tomatoes soak them in water or in the olive oil you will use
- In addition to raisins we can add 2 dried dates
- You can also add some fresh thyme
