Why do we love it?

This Tromagmeni Marida (little whitebait) is truly terrified. You, on the other hand, won’t be at all—once you taste it. “The Frightened Whitebait” (Tromagmeni Marida in Greek) is the rosé that’ll tickle your taste buds, spark summer memories, and have you refilling your glass before you’ve even taken a proper sip.

It’s the second wine we’ve created, and it’s a limited-edition rosé that’s already gained a loyal following. No surprises there. Grenache Rouge and Malagouzia come together in a wine that’s exactly what you’d expect from these two varieties: intensely aromatic, refreshing, and light, with the same lively character carrying through on the palate. Fancy some fruit? It’s got it. After a bit of floral charm? It’s got that too.

If you hadn’t guessed already, the label is the work of Thanasis Lalas—and it couldn’t capture the whitebait’s fright any better.

Since this is probably the wine you’ll want to keep permanently chilled in your fridge, start with a case of six—and reorder while you still can.

Tastes Like

In the glass it has a pale rosé color with onion-skin hues.

On the nose, generous aromas of red fruits and flowers take centre stage. Think daisy, lemon blossom, strawberry, and lime—summer in a glass.

On the palate it is medium-bodied, with lively, refreshing acidity and red fruits lingering on a well-balanced finish.

Pair it with light appetizers, shrimp ceviche, caprese salad.

Salmon burger

  • 1/2 kg fresh salmon fillet without skin and bones
  • 1/3 cup of bread crumbs
  • 1 tbsp of Dijon mustard
  • 2 tbsps grated Parmesan cheese
  • 2 cloves of garlic, finely chopped
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. of paprika
  • 2 tbsps. barbecue sauce
  • 4 whole wheat bread rolls for burger

Chop the salmon into small pieces, put it in a bowl and mix it with your hands until it becomes somewhat homogenized.

Add all other ingredients except buns and mix well with a spoon until they are well mixed. Make 4 equal sized burgers.

Heat a pan (or grill) in medium to high heat and cook the salmon burgers by turning them until golden - about 3-4 minutes per side.

Remove from the fire, place the burgers on the rolls and serve with extra BBQ sauce, lettuce and onion.
