Why do we love it?

Ioanna Tsilili returns to doing what she knows best, delicious rosé, and gastronomic wines from the terroir of Meteora, such as Io Rose Tsililis Terres. Three red varieties join forces and create one of the most playful roses!

The Tsililis Terres project may start its journey this year but it has been in the minds of its creators for a long time. Premium wines and spirits from Meteora, from mainly local varieties, re-introduce Ioanna Tsilili to the winelovers. Her artistic nature is reflected in the high aesthetic labels of the bottles and her "hand" in the wine. Io Rose Tsililis Terres is one of the two roses of the collection. The blend consists of Limniona, Xinomavro and Syrah. Each variety is fermented separately in stainless-steel tank and then the blend matures for 1 month with its fine wine lees. The result is overflowing with freshness and ripe red fruits.

Tastes Like

Io Rose Tsililis Terres has medium rose color and elegant aromas of lemon, strawberry, cherry, peach, white rose and sweet tomato.

In the mouth it has medium body and moderate (+) acidity. White peach, pink grapefruit, tomato leaves, strawberry, pomegranate and rose compose a special ensemble.

PAIR IT

Pairs very well with caprese salad, grilled haloumi with tomato and pesto, shrimp pasta

Casarecce with tomato sauce and tuna

300 gr. Casarecce pasta
150 gr. tuna in olive oil
1 onion
2 cloves garlic
1 green pepper
3 ripe tomatoes
1 teaspoon tomato paste
1 small cinnamon stick
1 clove
1 bay leaf
40ml olive oil
Fennel
Freshly grounded pepper
Salt

1. Chop onion, pepper and garlic into small pieces. At the same time, grate the tomatoes in the grater and boil the pasta in salted water.

2. In a frying pan, sauté in olive oil the onion, garlic and pepper for 3 ′. Then, add the fresh tomatoes, tomato paste, spices, bay leaf, salt and pepper.

3. Simmer the tomato sauce over low heat and just before it thickens up, add the tuna and the pasta. Mix well and remove.

4. Serve with chopped fennel and grated barley rusk.


Recipe notes:

-We can add a splash of ouzo, 1 tablespoon is enough
-If we do not want to use fresh tomatoes, we may use 300 gr. tomato juice or concasse
-We can add some cherry tomatoes cut in half towards the end of cooking
-We use the shape of the pasta we like, this sauces tastes better with pasta that do not contain egg
