In addition to tequila, which is produced exclusively from the blue agave, only 9 states in Mexico produce mezcal or roasted agave. Its difference from tequila, apart from the raw material, is also the way of roasting the plant, which in this case is done in ovens buried in the earth. This is due to its tobacco and strongly earthy character that differentiates it from tequila.
 
Clase Azul Mezcal San Luis Potosí is distilled from the green agave that grows on the desert slopes of San Luis Potosí and is harvested after it reaches 12 years of age. It is then slowly cooked in a steamy environment in traditional underground ovens and bottled in a work of art. The color of the bottle is inspired by the Huachichil tribe who lived in the desert and were called "red painted heads", while the cap depicts the colorful landscape of mountains and valleys.

In the glass, it is crystalline clear with silver highlights. The aromas are reminiscent of melted caramel, and jalapenos, with herbal notes of freshly cut grass and notes of edelweiss. In the mouth, it is full-bodied with aromas of herbs, caramel, cloves, lemon-lime zest, and a salty mineral aftertaste.
