Why do we love it?

They are the masters of biodynamic cultivation in Greece, with true passion for natural wines and the absolute expression of their terroir. We are talking about Tatsis brothers, of course. Pericles and Stergios Tatsis are the third winemaking generation of the family, and continue to respect the tradition of their grandparents' home, East Romylia.

If you want to impress your friends with a blend of intensity, aromatic complexity and amazing length, Angel's Peak 2018 is probably one of the best choices you can make.

Angel's Peak 2018 from domaine Tatsis is a blend of Malagouzia and Chardonnay, which are grown on the hill of Limpaskerit, which means' the hill where the angels live', just outside Goumenissa. Organic farming, low yields per hectare and minimal intervention lay the foundations. Varieties are vinified separately, and mature on their fine lees with tactical batonnage, before further oak maturation which lasts for a few months. After all, they are blended, and remain together in the bottle for a short period of time.

Limited quantities make Angel's Peak White 2018 one of the most hard-to-find whites and a must for your wine cellar. And dont rush to open it. It can wait for you for at least five years. Can you?

Tastes Like

Pale lemon yellow color in the glass.

Elegant, medium intensity nose, evolving at an unprecedented pace. Originally there is lemon jam and pear. Then comes honeysuckle, pineapple and melon. Hints of lime and orange peel come forward with vanilla and herbal hints of oregano following. Butter and light sense of toast complement the complex, evolutionary bouquet.

Medium (+) body, with intensity that lasts from the first to the last sip. The balanced acidity contributes to the overall experience by allowing the fruit and the barrel coexist harmoniously. Honey, honeycomb and yeast are combined with peach compote, apple jam and bergamot in a combination that the long lasting aftertaste will not let you forget easily.

with pork fricassee with celery, chicken with mastic or perch with herb crust.

Pork fricassee with celery

  • 1500 gr. pork
  • 1200 gr. celery
  • 3 cups of meat broth
  • 1 onion
  • 5 green onions
  • Olive oil
  • Salt
  • Pepper
  • 2 big eggs
  • 1 large lemon

Chop the celery and blanch it, in a lot of hot water for 5 minutes, then drain it.

In a pot heat the olive oil and saute the meat very well from all sides. Add the onion, finely chopped and season well. Add the broth and as much extra hot water as needed. Braise until the meat is softened. Add the celery and keep cooking for about 35 minutes. After you taste it and check the liquids, add some salt or a little broth, if necessary.

Once the food is ready we remove it from the heat. Take 1 cup of the meat juices from the pot. Separate the egg yolks from the egg whites and make a fluffy meringue, continue by adding yolks, lemon and juices from the meat. Pour in the eggs mixture, shake the pot to blend in and serve with a white wine.
