Why do we love it?

Have you ever tasted Asprouda of Serres from Domaine Nerantzi? Most likely you haven’t since it is an extremely rare variety that has been saved and cultivated exclusively from Domaine Nerantzi in Pentapolis, Serres. Are you wondering if you should try it? Definitely yes, and to be accurate, you have already lost precious time!

Asprouda began its "career" in 1998 when it was originally identified as a local grape variety and its cultivation began. Αfter that, its story was glorious, since the humble Asprouda began to appear in the wine lists of the best restaurants in the world and it was greeted by a huge gush of awards and distinctions.

Evanthia Mitropoulou contributed to all of this and with her oenological studies in Burgundy, she created a new era for the wine of Serres and the local varieties. She learned about the terroir from the best, so she put all her “art” and knowledge to create a wine that completely reflects the microclimate of the area, Asprouda of Serres by Domaine Nerantzi. The lively and aromatic variety matured for 4 months in oak barrels of 500 liters. Remaining in the bottle for two years transformed Asprouda of Serres into an overwhelming wine, with a complexity that many French chateaux would envy, incredible balance and seductive aromas.

Tastes Like

In the glass, it has medium golden color.

Engaging nose, with the aromas of candied citrus fruits, such as orange, bitter orange and kumquat, dominating all the way. Dried apricot, honey, chamomile, saffron, sweet apple, and toast gradually make their appearance. Mineral character complements the unique aromatic bouquet.

Juicy, medium-bodied in the palate, with balanced acidity and excessive aromas of brown butter, honey, chamomile, saffron, and bergamot. Kumquat, peach, grapefruit, hazelnut, and toast fill your mouth in every sip. The long-lasting, enjoyable, citrusy aftertaste remains in the mouth until the next sip. As long as it takes…

Pair it with pork with apricots, schnitzel, chicken with lemon sauce. 

Risotto with butternut squash and sage

  • 200 gr. rice for risotto (Vialone nano or Arborio)
  • 200 gr. Butternut squash cut into cubes
  • 150 gr. butter
  • 50 gr. Parmesan
  • 1 onion
  • 800 ml. chicken broth hot
  • 50 ml. white dry wine
  • 1 teaspoon of sugar
  • Fresh pepper
  • Salt

Heat the broth in a pot, until it’s hot enough.

Put the butternut squash in a pan with 50 gr. butter and a sprig of sage and sauté for 5 minutes while sprinkling with sugar.

Remove half of the butternut squash and add to the rest 200 ml. from the broth we have warmed up. Boil until the butternut squash softens.

Put the rest of the butternut squash in a pyrex. Add fresh pepper and bake for a few minutes on the grill.

Put the boiled butternut squash in the blender and mush it up. Chop the onion and saute it with 50 gr. butter. When melted add the rice, stir for 1 minute, add the wine and boil until it evaporates completely.

Add the broth and puree from the butternut squash gradually and patiently in small doses, without stopping to stir, until the risotto becomes creamy.

When it’s done, season well with salt and pepper, remove it from the heat and add parmesan, butter and 1-2 leaves of sage.

Serve while it is still warm.
