Assyrtiko Maison Viticole 2020 Domaine Ligas is an epic orange, natural Greek wine from the maîtres of this style, the Ligas family. On top of that, 2021 is considered to be its best vintage! Specifically, many oenologists and wine critics mentioned that 2021 was the best year of the decade. Thomas Ligas was one of the pioneers who brought the philosophy of biodynamic cultivation to Macedonia. With his children, Jason and Melisanthi, by his side they took things one step further. Their philosophy is summarized in the following: permaculture*, no interventions in wine, no sulfites, or commercial yeasts.

Assyrtiko Maison Viticole 2021 Domaine Ligas is an Assyrtiko that ferments with skin contact and indigenous yeast in stainless steel tanks, while 50% of the wine matures in used, Selosse Champagne oak barrels for 12 months. It is bottled unfiltered and the result is exuberant and intense. The epitome of orange wine as many might say. Such a diamond could only be bottled in a strictly limited number of bottles that can be found mainly in the wine lists of the world's best restaurants.

*Permaculture takes its name from permanent agriculture and concerns a way of cultivation that ensures sustainability. In simple terms, the cultivation of the vine does not compete with nature but works with her for the purpose of sustainability and viability of the environment.

Tastes Like

It has medium orange color and complex aromas of candied orange peel, yogurt, kumquat, citron, peach jam, honey, and toasted sourdough bread.

In the mouth, its structure is impressive, since it has a medium to full body, great concentration, crisp acidity, and a hint of tannins. The ripe citrus fruits are mixed with notes of lotus and quince, while notes of dough and wet stone complete the complex set.

ASSYRTIKO MAISON VITICOLE 2021 - KTIMA LIGAS

PAIR IT

Pair it with grilled fish, oily fish, seafood or chicken dishes with white sauces.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
